How to Freeze Zucchini No Blanching ~ Noreen's Garden

  • Greetings! The garden is in a state of change. Fall is on the way and summer is winding down. The tomato plants are starting to wither and the pepper plants are happy, happy, happy and producing a lot. So I imagine I will be picking peppers till Thanksgiving. The cucumbers never did anything but we have had a lot of tomatoes this year and thankfully so, I believe this year was the best year I have had for tomatoes in the eight years I have had this garden. I will be planting some fall squash here this weekend and will let you see what I do but for the most part things are holding their own, but the weeds have taken over and everything looks frightful due to the large amounts of late summer rain we have experienced.
    My neighbor grew a lot of summer zucchini and yellow squash so he was gracious enough to share. I love when I am the recipient of someone elses bounty. We tend to share things back and forth. I keep him in fresh bread and he brings me pears, zucchini and whatever he has an over abundance of. Symbiosis in action!
    So I thought I would take a moment today and show you how you can save the glut of zucchini coming from your own garden or your neighbor or the grocery store markdown rack in a way that does not require you to blanch them. This is an application that would be appropriate for zucchini cake, muffins, zucchini bread, zucchini fritters or pancakes.
    Simply grate the squash and measure into freezer bags. Label them date them and toss them in the deep freeze. This will be there whenever you want to make zucchini treats and it will keep in your freezer for up to a year.
    If you want to save the zucchini in slices then you will need to properly blanch them and I will show you how to do that in another video.

    Grating it before freezing seems to make it much more versatile than slicing and freezing. Grated zucchini can be put in just about anything: smoothies, hash browns, soups, stews, quick breads, spaghetti sauce, chili, stocks and broths, fritters, etc. Love the idea, thanks. I started a late garden at the end of June and I got tomatoes, zucchini, radishes, lettuce, but my cukes didn't do anything either.

    I thaw the zucchini in a strainer over a bowl and collect the juice. Then mix it with the appropriate measure of powdered milk and then use that for the milk in the cake/bread/soup recipe.

      Ah, that's smart! I recently started freezing my grated zucchini for breads, but thought I was missing something because it lost so much liquid when thawing that my 2 cups grated ended up being 1 cup. So I ended up on this video... I still haven't learned anything new to prevent it, but at least I won't have to waste the liquid. Thanks for the idea!

    To compliment your other uses. I put the frozen grated zucchini in my spaghetti sauce & chilli and cook it until it breaks down . Extra nutrition & fibre. No one even knows it's there! Sneaky lol

      Noreen's Garden My Mom puts zucchini in her cheese hash brown potato casserole for the selective eaters in our family who think they don't like zucchini....ha ha. Love your website Noreen! :)

    Keep the handle of the zucchini on while you grade it and then you do not have to worry about grading you fingers.

    If you leave the stem on you can use the stem as a handle to make it safer to grate.

    I laughed outloud when you said "Leaving it on someones porch and running away, so they do not see who left it" I have actually thought of doing that!!! I have cucumbers running out my ears!

    I've had so much zucchini lately, that all our neighbors are filled to the brim....and I use a lot of it. Our chickens are also blessed with one or two "baseball bats" every day which they love. But after watching the video, I am heading to the garden now and picking all the young zucchini and shredding them up and freezing them. It will be so wonderful this winter having all this precious produce. Thank you so much for this info.

    Thank-you Noreen, I love the idea shredding by hand too. I have several more large (club size) zucchini I found in my garden today. They were hidden from view. Either that or I need a new pair of glasses, LOL. I will save this project for Saturday so that my wife can help out. Again Thank-you.

    Savoury Zucchini slice with cheese bacon etc. is another great way to use it in the winter time. I weigh out the required amount and put them in just like you do. The recipe always comes out fine. Thank you.

    This is exactly what I do, it's perfect in a recipe and I use it in soups also.

      @@jlfoodforest it is liquidy, I just dump it in and proceed with the recipe and add a little extra flour. Nothing has made a noticeable impact in flavor or texture of end product. Fresh is best, but I grow most of our food so I have to use what I have. I use it right from the Frozen state. Remember all that water was in the original product when it defrosts it just comes out of the product. So essentially it's still has the same amount of water in it if you use it from the Frozen State it's in a much better easier product to do

    I put up zucchini just like you. When I take it out of the freezer, it has lots of water but I just press it in a wire strainer and then use it in cooking. I do this with summer squash too. It works perfectly in making bread, savory pancakes, etc.

      I was just thinking we have a spiralizer and never seen to use it, but it would be GREAT for this and we are going to be growing this year. We are in WA state so haven't hit out zucchini peak yet. I have some health issues so the combo of that too and your freezing process will be awesome.

    Thank you, Noreen. At last, a less time-consuming way to preserve zucchini. Every video I watched they tell to blanch then put it icy water then drain it, let it cool and put in freezer bags. This takes so much valuable time. Does it make any difference without doing all that extra work? Are Zucchini leaves edible? Thank you. Best wishes.

    Thank you Noreen! I am awash in Zucchini at the moment and was wondering if I could freeze it w/o fussing with blanching et al. Every time I go to the Farmer's Market this summer asking for summer squash or courgettes, the farmers often give me an extra big honking squash for free!! Good idea adding this to spaghetti sauce. :)

    Great video h information!.
    My food processor shreds zucchini to look exactly like yours, but it has a shredding disc attachment. It isn't processed using the chopping blade.
    I've tried using a box shredderike yours, but it seems like the zucchini comes out too 'wet'.
    Any, suggestions on why my zucchini is so wet after using a box shredder?

      The grater may not be sharp enough. Different qualities have been a problem for me in the past.

    Don’t cut off the one end, that when you are grating is your handle so you don’t grate your fingers.

    Awesome thank you for sharing! Watching you grate that I had a light bulb go off in my head, instead of cutting both ends off leave one and you will have something to hold onto while you grate. I wonder how many knuckles I would have saved had I thought of that sooner haha.

    I suggest if you freeze vegatbles use fresh not old ones like in this video. They also joke around about haveing to much. There are plenty of food shelves you can bring extra food to.

    Can you do the same with squash? I have a GIANT squash (80 pounds) and I thought it was a watermelon! When we cut it open it turned out to be a giant squash. I was in shock! Can I freeze it raw? I have to do something with it now as it have just cut it open.

      I let the shredded zucchini only thaw enough to break it apart. Then I stir it, stii frozen into my bread batter and bake it. You get all the flavor and liquid into your bread and it's not a bit mushy.

    Is the zucchini watery when you thaw it? In the past the dough is too moist. Any ideas???

      It can be watery but you can always press it between paper towels or put in in a strainer to remove excess moisture.

    I've tried freezing zucchini before without draining it first BIG MISTAKE comes out very mushy and gross once it thaws

      Not silly at all. You call these Courgettes in the UK, we call them Zucchini squash. Same thing.

    Why does everyone always cut off the stem end when they are going to hand grate it. If you leave the stem on it gives you something to hold so you don't grate your fingertips!

      You can't freeze cucumbers. They do not have the fiber structure to withstand freezing. They must be eaten fresh.

      I'd say personally you should always blanch your veggies. Makes a difference. Anytime I've ever tried this method I got mushy wet zucchinis.
