That ice-cream server looks very much like a fish slice server to me.
It is similar in size but I have seen the fish slice server in this pattern and it is a little different.
Number one is quite similar to my large jelly server.
My late employer described using the lettuce fork and spoon for serving wedges of iceberg lettuce with cold dressings at ladies' luncheons back in 1950's - 60's Louisville.
