Oh my, this brings back memories especially the chitterlings and Hog Maw. My mother used to cook chitterlings, Hog Maw, not much collard greens, and black-eyed peas. Everything looks absolutely amazing. I'm not a hot sauce person. I eat it on certain things, but some ppl can't eat without it. To me, hot sauce takes away the taste. Chef this is definitely the New Year's traditional meal. I will eat everything except those chitlins and hog maws lol. I am still traumatized by them from my childhood when my mom (RIP) would make me stand by her and watch her clean 20 pounds for hours. Worst punishment ever lol. Her birthday was January 5th. She would throw herself a party and invite all of the family over. She served hers with collard greens and potato salad and definitely trappey's red devil hot sauce. I wanted to note that so many other cultures eat intestines, and stomach, which the 'foodies' love to hype. Yet, I found that when these 'foodies' speak about chitterlings and Hog Maw, they stick their noses in the air. Super annoying, yet not surprising. Keep up the good work!
My mom used to make me and my brother hog mogs all the time. She used to buy it at the butcher and it came in block. Some of my fondest memory as a kid is my mom cooking hog mogs, and she would take them out and then she would fry them and put a little hot sauce in them. It was a real treat.❤

My mother cooked chitterlings, but we wouldn't eat them because of the smell. However, I started to eat then when I was in college. This meal brings back memories to me also. Man, While you were putting this together, I remember every household that I would stand around watching the two or 3 women of the house cooking this very same meal. And in Bedford Stuyvesantt Brooklyn, it was not just the blacks doing this, The Italians, the Latinos, and the Germans, had there own home style of cooking everything you had in this video. I was so lucky to taste and watch all those preparations being done. I don't remember how young I was , but loved all of this back in the day. I have not had any of it in my adult years.. People up North just don't cook how it was done . Thanks man.

Pitmaster Chef you done brought back some deep memories on this video right here 😁Good old Authentic soul food of the Deep South indeed Everything look sooo good this is my mother kind of cooking she made nothing from a can she cooked Just about everything off the pig Lol Hog maws I never tried but chittering I did when I was very young didn’t catch on to the taste but yes I would love to try them now and my Goodness the way you cooked them up looked very delicious and as always a beautiful presentation you can surely cook what a Blessing.
My grandmother taught my mother and her 7 siblings to cook soul food the southern way she learned born and raised in Georgia . The potato was washed and scrubbed with salt to get rid of any dirt and loose skin and rinsed and added to the uncooked chittering whole along with a washed whole lemon both uncut. They are used to absorb the smells from the chitterings. When the chitterlings are done the whole potato and lemon are tossed because they did what they were put in to do absorb the smells. The potato and lemon when cut open smell entirely like chitterlings. So that’s how it was passed down on to through the years from my great grandparents and grandparents and my mother. I loved chittlings up until 2005 I lost the taste and look of them and all intestinal food and have not eaten any since 2005 and haven’t craved them either. It’s been 20 years. I like your videos I am going to cook my first Brisket from your video , already picked out my smoker on Amazon. Glad I found you on social media.

Love this preparation! Hell when don’t I love it on this channel. Throwing pork in the oven with a white wine bath is completely underrated. My grandmother used to cook sausage that way and it always comes amazing.

Chitterlings and hog maws are an annual New Year's Day meal right aside black-eyed peas and cabbage. We cooked outside typically. My Dad grew up as a sharecropper in the 30's so this not an unfamiliar meal to me but I'm sure not eaten as often now as when he was a child. Think the meal I miss the most from my youth is fried tripe. Might try and find that and do this weekend though I'd imagine no one around here will try if I tell them what it is. LOL

I forgot to ask would it be ok to clean the hog maws and chitin, season then add the potatoes and spices and cook them in a slow cooker.

Man, While you were putting this together, I remember every household that I would stand around watching the two or 3 women of the house cooking this very same meal. And in Bedford Stuyvesantt Brooklyn, it was not just the blacks doing this, The Italians, the Latinos, and the Germans, had there own home style of cooking everything you had in this video. I was so lucky to taste and watch all those preparations being done. I don't remember how young I was , but loved all of this back in the day. I have not had any of it in my adult years.. People up North just don't cook how it was done . Thanks man.

Pitmaster Chef you done brought back some deep memories on this video right here 😁Good old Authentic soul food of the Deep South indeed Everything look sooo good this is my mother kind of cooking she made nothing from a can she cooked Just about everything off the pig Lol Hog maws I never tried but chittering I did when I was very young didn’t catch on to the taste but yes I would love to try them now and my Goodness the way you cooked them up looked very delicious and as always a beautiful presentation you can surely cook what a Blessing.

My grandmother taught my mother and her 7 siblings to cook soul food the southern way she learned born and raised in Georgia . The potato was washed and scrubbed with salt to get rid of any dirt and loose skin and rinsed and added to the uncooked chittering whole along with a washed whole lemon both uncut. They are used to absorb the smells from the chitterings. When the chitterlings are done the whole potato and lemon are tossed because they did what they were put in to do absorb the smells. The potato and lemon when cut open smell entirely like chitterlings. So that’s how it was passed down on to through the years from my great grandparents and grandparents and my mother. I loved chittlings up until 2005 I lost the taste and look of them and all intestinal food and have not eaten any since 2005 and haven’t craved them either. It’s been 20 years. I like your videos I am going to cook my first Brisket from your video , already picked out my smoker on Amazon. Glad I found you on social media.

Love this preparation! Hell when don’t I love it on this channel. Throwing pork in the oven with a white wine bath is completely underrated. My grandmother used to cook sausage that way and it always comes amazing.

The only drawback is I couldn’t eat much of any one thing. And the cornbread! Wow, I have never seen this recipe. But really, I couldn’t eat but one delicious bite. Kudos

Plus we don't eat pork any more (although I sneak bacon now & then) and the pickled onions accompanying it and hot sauce... 👍🏽! (Chef's kiss) Not everyone can make flavorful chitterlings but my maternal gma made all that and home made hog head cheese magnificent! Chitterlings and hog maws are an annual New Year's Day meal right aside black-eyed peas and cabbage. We cooked outside typically. My Dad grew up as a sharecropper in the 30's so this not an unfamiliar meal to me but I'm sure not eaten as often now as when he was a child. Think the meal I miss the most from my youth is fried tripe. Might try and find that and do this weekend though I'd imagine no one around here will try if I tell them what it is. LOL

I'm used to vinegar with all my pork pot boils like chitlins ,neckbones wnd pig feetand extra ons will also make gravy thick in these dishes and in all your bean dishes.
