Surprised no one has mentioned it yet, but the temp swings are most likely due to when the wood chunks catch fire in the hopper. I see it all the time... especially on my Weber when I use my Slow & Sear.... when hot coals reach the wood chunks they catch fire... pushes temp up until flame dies out.

Ya this rig on low n slow cooks has been a roller coaster for me! Plus I am going to use briquettes on longer cooks also. I love using lump but it might just be getting so hot that even if the fan stops the temp keep rising!??!! Thanks Rus and these did turn out pretty dang good!! I see you placed the ribs on the bottom rack; not on the second rack. You don't feel the bottom racks cause too much heat on meats (in general), whereas on the second rack, the heat circulates around the meat, evens it out more? Just asking...
Thanks for watching Joe and great question! I have done it both ways bro! IMO no real right or wrong way. On this cook I did want them to get done a little faster so being on those cast grates they hold more radiant heat which will speed up the cooking process some!! On this short rib cook those bones are thick and protect the meat pretty decent, but I did have a brisket get a little crispy on that bottom rack once but I had some type of huge temp spike for about an hour that I never noticed. Again good question and if you feel more comfortable with it on the middle rack, not a single thing wrong with do it that way! I appreciate you leaving a comment!!

@@DeadBrokeBBQ If you can get them, B&B Char logs work really well on slower cooks. Part of the temp swing can be that in the hopper the fuel source in there may have like a "log jam" situation going on. If you have ever heard something coming from it sounding like a "drop", that usually means it just cleared. I have seen spikes come when the drop occurs. Not seeing this much with the B&B Char logs on lower temp cooks, and not really at all with briquettes.
I will certainly see if I can pick some of those up!! I have a hard time getting much B&B up here is Wisconsin. There is a hardware store that carries them but they go fast! Seems like every time I stop there they are sold out!!! hahaha Again another great nugget of info bro!!

So in Wisconsin, I am finding it challenging to find Beef plate ribs, as when I am in Texas I find no problem, everywhere has them including Walmart. But here in WI, I find it challenging, sometimes Costco gets them in, but have you found anywhere else that carries them that we might have here in SouthEast WI?
Hi Oscar---yes it is not an easy find but I can get them at a few local bigger butcher shops but if you go to Sam's Club and ask them you should be able to get a package of 2 racks in a pack , Just ask them not to cut them up!! But there are a lot of decent butchers down in the Southeast so call around and worse case scenario they special order them. Here in Wisconsin they are mostly braised in a pan or boiled and that is insanely wrong!! hahaha Thanks for watching and good luck bro!!

At first I thought the same thing but 30 mins after I turned it down then it hit those chunks and it start to smoke and I could tell it was those 3 chunks. I was told that it might have been a damning affect. Where the lump got packed and after it released and dropped it might have ignited a bunch all at once. But I decided I am going to run briquettes when I low n slow it to see if it will run more consistent?!?! We will see!! Thanks for watching Dash and have a great week!

Like the upgrades to that fuel hog! 👍 Tom is the Man! With the marbling in those ribs was Braising really necessary? It kills the bark that you were trying to achieve. But.......That's just Me......I'm sure it's awesome! 👍
Ya I agree Ken! When I do beef ribs and want to braise them up with some wine I really try to push that bark to a meteor look a like because I know the braising process is going to wash it out a bit. Now the taste the Cabinet adds is addicting though!!! ha ha I don't do them like this all the time but when I do people seem to like them even more, I hope it ain't from the alcohol !!!???!!! ha ha Then next video on my Smoke Daddy I do a couple racks of beefers also but I only got 6 out of 8 good bones. I wouldn't even consider purchasing another Masterbuilt brand. The Masterbuilt has quality issues that have been around for several years and rather than work to eliminate the issue, they choose to "grease the squeaky wheel". The biggest problem by far, is now "due to covid" you can't talk to anyone when you call for tech support. You have to submit an online form and someone contacts you via email, and It seems that there could possibly be a language barrier. #MasterbuiltIsJunk

Have you tried using the middle grates on your slower cooks? on my 1050 I find middle rack cooking get a more even temp.

I typically use just plain water. But if I am struggling to get a nice bark I will use a little apple juice to help darken it up. Thanks for watching.

Depends on the temp you are running at but it is not the most efficient cooker I have.
I am in Rice Lake Wi,, my 560 works even in 20 below. barley lol
