SO TASTY IT's NUTS!! Easy crunchy Peanut Slaw Recipe

  • LEARN HOW TO MAKE THIS EASY CRUNCHY ASIAN PEANUT SLAW RECIPE!
    LAY HO MA! This recipe is perfecto for the summer because it is incredibly refreshing and full of flavour. Join me in this episode and learn how to make this quick crunchy peanut slaw recipe right at home! Let's begin
    DRESSING INGREDIENTS:
    1/3 cup peanut butter
    small piece ginger

    3 tbsp soy sauce
    1 tbsp cane sugar
    2 tbsp olive oil

    1/2 cup coconut milk

    1 tsp chili powder

    splash of lime juice

    SLAW INGREDIENTS:
    200g red cabbage

    250g nappa cabbage

    100g carrot

    1 apple (Fuji or gala)
    2 sticks green onion

    120g canned jackfruit

    1/2 cup edamame
    20g mint leaves

    1/2 cup roasted peanuts
    DIRECTIONS:
    1. Blend the dressing ingredients in a blender on high until smooth

    2. Shred the red and nappa cabbages. Slice the carrot and apple into thin matchsticks. Finely chop the green onion

    3. Squeeze the liquid out of the jackfruit and flake into a very large mixing bowl
    4. Add the cabbages, carrot, apple, and green onion into the bowl along with the edamame and mint leaves

    5. Heat up a frying pan to medium heat and toast the peanuts for 3-4min

    6. Pour in the dressing into the slaw to taste and mix well

    7. Plate the slaw and top with some toasted peanuts

    This man is an inspiration. His vegan ramens have changed my life. I was always depressed because i loved ramen but could not find any good vegan/vegetarian ramens with variety. He changed all of that! Keep up the great work!

      Let us know how it tastes! I'm not a fan of mint in my foods, so I was thinking of using Italian Basil (it's what i have growing).

      @@GpD79 , I have both mint and Thai basil in my garden so I could try both I guess. But our mint, Kentucky Colonel, is a bit overpowering. Thai basil has both subtle mint and basil flavors so it could be a win/win.

      Not the same. Sorry. mints go good with it. Not Thai basils. I'm half Thai and mints are used in salads

    I admit I’m not a huge fan of canned jackfruit, so I used tofu that I put in a tofu press, marinated, and then baked in a high temperature oven. I love this salad - it was the first recipe from your new book that I tried. Definitely a favorite in my house.

    I attended this party and it was fun! I made few changes (used Tahini instead of Peanut butter and roasted sesame seeds instead of peanuts) and it worked beautifully! thanks for so many great recipes I would never come up with on my own.

    In Indonesia 🇮🇩 we have a quite similar like this. Called Gado-Gado. A salad with sour-spicy peanut sauce.

      @@janicewalker477 The flavor can vary in my experience. It depends on the brand and in the end it’s a natural product. It has evolved over the last couple years though. At first, the Jackfruit products I tried where a bit sour but lately they’ve become fairly neutral in taste. The consistent isn’t stringy from what I can say, it's nothing you have to chew extra hard.
      If you want to experiment with Jackfruit, I'd also like to recommend the dried fruit. It’s really yummy. Maybe even fresh, if you’re lucky and have access to a Asian or Thai shop that sells fresh stuff.

    Another winner! I love that you simplify the recipes, so I don't have to searching for ingredients. For this, I just need to pick up red cabbage and jackfruit. I have green cabbage, but the red will be pretty, and I get to use up my green onions. Thank you!

      In most cases cooked foods lose vitamins, enzymes, and nutrients so going 50-60% raw will let you avoid deficiencies that are more common with mostly-cooked vegan diets

    I am a maet eater and I have made a few of your recipes and they have two things in common.
    1. Easy to make.
    2. You learn about cooking with a wide variety of spices.

    Hi Wil - - no offense intended to your fabulous culinary skills, but for those of us cooking simplistically, I just wanted to let your viewers know that I grind or shred your recipe ingredients in a food processor and, while it doesn't end up looking as fancy, the final result tastes just as good !!!

    Ngo Ho Ho☺ I simply adore how when cooking you use absolute bare minimum words of instruction. But when you get to the flavor description your use of words is no longer refrained - serving PRECISELY the layer flavor of the recipe. I can CONFIDENTLY place this recipe in my repertoire without the need of a trial run. That sir, is proof your mission is accomplished.

    That was just so fabulous! I had a lovely young soft leafy Napa cabbage which was very nice indeed. Then I ran out of peanuts and subbed air-fryer roasted cashews: mmmm. And because I am a coward about jackfruit I just added extra edamame. A full meal on a plate that I could have finished but didn't because I want some tomorrow too. Thanks Wil, what a delightful meal.

    My husband wants/needs a big protein source on top. In summertime we often have interesting dinner salads, then topped with BBQ chicken or steak or with Asian style salads such as this, we top with a seared rare tuna steak. If you like this salad then look up the pak/bok choy salad w/toasted crunchy ramen noodles, slivered almonds, & sesame seeds, with a dressing of a bit of OJ, soy sauce, vinegar, bit of peanut oil. This looks amazing & can’t wait to try it…probably with a rare tuna steak…it just may be our new favourite salad!!

    That inspires! I’m not very good winging it with Asian flavours and definitely need recipes to make my own. Thanks for this! Edit: I just made this and it is the best slaw I have ever had! Obsessed! I eat low carb so I mixed almond and peanut butters, stevia drops instead of sugar and less apple, it’s perfection. I’m getting your cookbook!

    Though I am yet to buy Cabbage etc for thr slaw, I just mixed Peanut butter, vinegar, a bit of olive oil and coconut milk- and used that dressing with my cucumber and lettuce (with a tiny bit of green chilli) - the best salad of my life

    So true: I will be making this again! This recipe had my non-vegan husband eating more than one serving! I’m planning to use just ripe peaches or pears in place of the apple this summer. Thanks for the recipes! 🙏

    I will try this amazing recipe today. I would suggest chopping the apple at the very end, unless you have the dressing ready, to prevent it from oxidizing and turning brown.
