- Join DeVonn Francis as he makes matcha Basque cheesecake. DeVonn loves this style of cheesecake because it's not as fussy as its New York style counterpart. This recipe is a great place to start for new bakers, but don't worry -- it doesn't skimp on the decadence you crave from a good cheesecake.
Recipe below:
INGREDIENTS
2 lbs. cream cheese, room temperature
1½ cups sugar
6 large eggs
2 cups heavy cream
1 tsp. kosher salt
1 tsp. vanilla extract
⅓ cup all-purpose flour
¼ cup matcha powder, plus more for serving
Nonstick vegetable oil spray
SPECIAL EQUIPMENT
A 9”-diameter springform pan, electric mixer (recommended)

Preheat oven to 400°

01:15 Prep the batter: beat cream cheese and sugar together

03:11 Add heavy cream, vanilla extract, and salt
03:27 Sift flour into batter
04:22 Sift matcha
04:48 Divide the batter into two bowls and add sifted matcha powder to one
05:56 Pour batters into prepared pan, alternating between colors
06:23 Use a wooden skewer or spatula to create a marbled effect
06:49 Bake the cheesecake at 400° until top is deeply browned but center is still very jiggly, 60-70 minutes
06:56 Cool completely before removing from pan
08:13 Dust top with matcha powder
08:15 Taste!

Basque baking is best baking. Feel like these in particular have exploded since I last went and couldn't find a recipe anywhere. Is the recipe adjusted for matcha or could I just leave it out if I wanted to make it and don't like matcha?
You can leave it out. The recipe has the same ingredients and quantities (except matcha) of a Basque burnt cheesecake that Molly Baz posted on BA two years ago.

I made a Matcha Cheesecake in the past and wasn't a big fan. I guess I was expecting it to be a bit sweeter and the bitterness was a big turn off for me.
Not really sure if there is a strict difference in terms of cooking, but ceremonial grade matcha is naturally a bit sweeter than culinary.
Can always add more sugar, honey, whatever though.
It can be an acquired taste however, some Japanese sweets are a good way to get used to the flavour maybe.
