Wild Spinach Cake (with Lambs Quarters)

Lambs Quarters season here and this is so much fun! Basically it's a cake similar to the wild green cakes in my book, but it's vegan friendly.
You cut up a bunch of greens very fine, mix with some flour and spices, pile them into a pan. As the greens cook they wilt down into a thin, delicate cake of greens. It's a fun side dish or the basis for a larger plate as a demonstrate at the end to give you some ideas. The full recipe proportions below for your foraging pleasure. - Розваги

Currently doing this with the radish tops and orach I got at the farmers market today. We've had a cold and wet June here in Manitoba so far, but gosh I do love this season.
The ending looks like a Lambsquarters Pacman. :) Looks delicious - I'll have to give it a try next spring.

Beautiful! We always give the lambsquarter growing around the house permission to do whatever it wants and could use a delicious looking recipe like this one to keep the place from turning into a jungle. I love this plant and cant wait to give this one a try. Thank you for the inspiration!

Love it, end result looks similar to an iranian dish called kookoo sabzi. We usually put chopped walnuts in that, might go well with this recipe too

Do i cut them? I want mine to grow back. Every video says to pull by the root
You cut them if you want them to come back. If you pull by the root it kills them.
