    One of the most popular and heavily used recipes on my website is a simple tutorial on how to make vinegar from different fruit scraps. It's fantastic, makes strong vinegar like you'd buy at a store, and only takes a few weeks.
    It's the perfect way to use cooked scraps from making purees, but you can also use scraps from jelly and jam making. The full recipe is on my website linked at the top of the video description.

    Fruit flies are high in acetobacter and beneficial to the vinegar making process.

    Good to know that the fruit flies don't bug it
    I use coffee filters so I didn't get any inside but they love the coffee filter if I got it wet

    Great idea I ferment crab apples and then make vinegar
    Good to know that you can use any fruit
    Choke Cherry vinegar would be nice from making jelly..

    can i replace that large amount of white sugar with Honey ? we have a lot of honey on the farm and I am reluctant to use sugar in general. cheers

    Could a Coffee filter be Used to Cap of the Jar? Instead of Cheesecloth? Or is A Coffee filter Not breathable enough?

      Follow up question to this: Does it just need to burp or does it need oxygen, ie. can I airlock it?

      I use a coffee filter for mine - works great. And it does need oxygen (like kombucha) but it forms a pellicle on top so it sort of self protects while it is working.
