- A fun tutorial on decorating sugar cookies with Royal Icing. This week we are making and testing paint your own sugar cookie palettes. Paint your own (PYO) cookies have become the hot new cookie trend and with Easter around the corner the palette buzz is in the air.
This is the first part of a two part series where I will make 5 different types of paint your own (PYO) cookie palettes. Don't miss part two where I test and review 6 palettes all together.

Thanks for this! Super helpful to avoid smarties! If you pipe your royal icing transfers on acetate they tend to stick so they don't move when you paint them.

Hi, Happy New Year! can I use lemon juice instead of lemon extract? How does the acidity help? Thanks 😊
Happy new year to you too! Lemon juice has water in it which will break down and impact your icing. The flavour of lemon won't evaporate when it dries the same way and that's if it dries. If you have a high proof clear alcohol that can be used as a substitute. Hope this helps! Thanks for watching.
Can you use icing sugar to allow the gel to set and dry faster? Does the cornstarch leave an after taste?
Icing sugar won't help it dry - it will just get stuck on and make it really sticky. You cannot taste the cornstarch - I promise!
Can you freeze the gel palette in batches? I wonder if they will sweat and be a mess when you thaw??
After you take them out of the freezer, IMMEDIATELY unstack them and put them in a single layer on a rack or cookie sheet to fully dry. Only then can you handle them and finish the decorating process. The change in temperature and humidity from the freezer to room temperate creates condensatio, and moisture will accumulate and smear the cookie of you don't separate them immediately upon taking them out of the freezer.
Hi. Can I use coconut or almond extract instead of the lemon?
Dawla Shabib I think is the acidity in the lemon juice that gives it what it needs. You can also use a high proof, clear alcohol such as vodka in place of the lemon. The alcohol content evaporates and leaves no taste. I hope you found this helpful! Thanks for watching.
I was looking for the one that's on the paper. Can you explain how you did that one?
The paper one was purchased from The Cookie Countenance. I realize my thumbnail was a bit misleading though so I have now adjusted its photo. In part 2 I do show myself testing the store bought paper option.

Is it possible to make the gel dot palette on fondant instead of royal icing? Would the fondant disc need to dry out (harden) prior to applying the gel colors?
I don't have much experience with fondant on cookies. It's worth a shot to try though. I'd love to know how it goes. If you try it please message on Instagram to let me know how it turned out.

@@nicolek5404 unfortunately the colour constitution would not be high enough and the colour would not transfer. The food colouring needs to be sitting on top of the icing for it to lift of again. I hope that makes sense. Thanks so much for watching!
What is cornstarch for?
It ensures the food colouring sets and dries.
