Super Moist Vanilla Cupcakes with Easy Buttercream Frosting | Egg & Eggless

- Super Moist Vanilla Cupcakes - This week I decided to make easy vanilla cupcakes. Since I’ve make the eggless version some time ago and I have not made the egg version. This recipe is super easy, just getting the right measurements of ingredients, you can enjoy super moist cupcakes, both egg and eggless versions. I’ve made super easy buttercream, so creamy and delicious. It is not too sweet as I add in minimal powdered sugar, it’s very stable and great for piping. Hope you’re inspired and give it a try. Ingredients:
This recipe yields about 8 cupcakes for each egg and eggless version.
• Vanilla Cupcakes (egg version)
120g [½ cup] milk
15g [1 tbsp] white vinegar
150g [1¼ cup] cake flour
¾ tsp baking powder
½ tsp baking soda
½ tsp salt
100g [½ cup] fine sugar
57g [¼ cup] oil
1 tsp vanilla extract
1 large egg
• Vanilla Cupcakes (eggless version)
150g [1¼ cup] cake flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
100g [½ cup] fine sugar
110g [½ cup] oil
120g [½ cup] plain yogurt
1 tsp vanilla extract
• Buttercream Frosting (for each version)
225g [1 cup] unsalted butter, softened
130g [1 cup] powdered sugar
60g [¼ cup] heavy cream
1 tsp vanilla extract
Red food colouring
Piping tip: 1M
Edible pearls (deco)
Ingredients:
• Vanilla Cupcakes (egg version)
1. In a glass, add milk and vinegar together. Mix until well combined. Let it rest for 5 minutes.
2. In a large bowl, sift all the dry ingredients (flour, baking powder, baking soda, salt). Set aside.
3. In another large bowl, add sugar, oil and vanilla extract. Mix vigorously until well combined.
4. Add in the egg. Mix vigorously for at least 1 minute until well combined.
5. Add in the milk mixture in 2 batches, alternate with the sifted ingredients. Mix until combined.
6. Add in the sifted ingredients in 2 batches, alternate with the milk mixture. Mix until combined, do not over mix.
7. Scoop the batter into 8 cupcake liners.
8. Bake them in preheated oven at 180°C/355°F for 15-18 min or until the inserted skewer comes out clean.
9. Place the cupcakes on the rack for cooling.
• Vanilla Cupcakes (eggless version)

• Buttercream Frosting (for each version)
1. In a large bowl, add in the butter (softened).
2. Mix the butter on high speed for 3 minutes or until creamy and pale.
3. Sift in the powdered sugar. Continue mixing on high speed for 3-4 minutes until well combined.
4. Add in the heavy cream and vanilla extract. Continue mixing on high speed for another 2 minutes.
5. Divide the frosting into half. One of the halves, add in the red food colouring. Mix in until the tone you desire.
6. Bag each batter colour into a piping bag. Pipe a thick long strip on the cling film. Wrap and roll up the cling film. Trim off one side (you can see 2 colours prominently). Place the rolled up cling film into another prepared piping bag with the piping tip. Ready for piping.

Hi Fiona! Buttermilk (or the homemade version you made) is always a great addition for extra moisture! I love you didn't use butter for the batter, I prefer oil for cupcakes so they stay very moist! Well done, they look gorgeous with that double color frosting!

@gracioustreatz7231 Lovely recipes, o have tried many of your eggless cake recipes and they all have turned out very well. Can i use the buttercream as frosting for the cake decoration? Will it melt in warmer temperatures before cake cutting or would it stay intact?

Hi Rose. Yes you can make it into one cake. 7 inch or 6 inch will be ideal. Bake in preheated oven at 180C/355F for about 35 min or until the inserted skewer comes out clean ☺️

As the butter cream has heavy cream does it have to be kept in the fridge?
Can we use powered and seived sugar or do we have to use icing sugar. Hope the texture is not grainy.

Beautiful!! 🥰🥰🥰 is there a certain size for the cupcake cases? As they look bigger than what I have.
I used standard size of cupcake liners, 5cm base 8cm top diameters. But you don't have to use the exact same size. You can use any size you find, usually they are only different in few mm ☺️

Hi thanks for the recipe, I wanted to ask is it 220 or 120ml of yogurt as the other video you have for the eggless cupcakes state 220ml yogurt so does your website. This one says 120, can you clarify this please. Thanks
Yes for this video I used 120g yogurt only, somehow it still turned out great. If you have successfully made the cupcakes using the other recipe, you may stick to that one ☺️

It will be similar make sure to sift the flour in I don't remember if she puts baking powder but put a 1/4 tsp extra

Maybe completely omit or just add 1 tbsp milk will do. Milk cannot be too much as it's different from heavy cream ☺️
Saw that the eggless version did not reduce the sugar quantity. What type of plain yogurt did u use so that the cake is not too sweet?
Plain yogurt is sugarless. Choose one that has no fruit flavor, and it is white

Does this buttercream melt in the summer?
It's very stable and will not melt. However, you need to chill it at least 2 hours so that it will be very stable in room temp. It will maintain its shape in room temp for at least 3 hours in summer

Hi dear. Yes you can with the same amount as cake flour and omit the baking powder. But you'll still need the baking soda amount mentioned ☺️

@@kateashley9027 for every cup of flour, remove 2 tablespoons. Add 2 tablespoons of cornstarch to replace the flour, and sift together. That is how its made.
