✔️Batter
1/3 cup unsalted butter [(room temp) [75 grams]
3/4 cup white sugar [150 grams]
3 whole eggs [60 grams each]
1 tsp vanilla extract [5 ml]
1/2 cup milk [120 ml]
1 & 1/2 cups cake flour [180 grams]
1/2 tbsp baking powder [7.5 grams]
1/4 tsp SALT [1.5 gram]
✔️BUTTERCREAM FROSTING
3/4 cup unsalted butter(softened) [170 grams]
3/4 cup all purpose cream (chilled)/ heavy cream [180 grams]
1 cup powdered sugar [130 grams]

•Skip salt if using salted butter.
•Avoid over mixing the batter.

If dont have cake flour can i use plain flour?
Yes you can, but proportion should be adjusted as it may affect the batter consistency since cake flour is less dense than plain flour. you may reduce around 1/4 cup. (but if mixture turned runny, you may add it up again to match the consistency.

I used whipping cream instead of double cream....my frosting curdled😢
My cupcakes came out quite nice although the mixture was definitely a bit firmer as what was shown even though I kept strictly to the measurements. Living in South Africa, I'm not familiar with the term 'powdered sugar' which here could be icing sugar which is in a powder form or castor sugar, also a form of preferred sugar but they are quite different from each other. I started off using castor sugar but sensed that it was not the right form of sugar and started adding icing sugar which then firmed up the mixture but resulting in extremely sweet frosting😢. The grand children will decide whether it is a thumbs up or a thumbs down😊
