Made this for dessert tonight. Delicious!! I made one modification. I substituted one of the cups of white sugar for brown sugar. So a cup of each. Gave it sort of a carmely flavor. Definitely a keeper recipe!!
You cannot say enough about how good fresh nutmeg is. I watched you make divinity and I like the way you did it so I subscribed and you have not disappointed me with any of your recipes. So glad I found a kindred spirit in the kitchen. Thanks a lot Bill from New England.
my Nana use to can apples from their orchard and make both smooth and chunky applesauce. The chunky mixed variety apples she'd make into an apple, date, walnut bundt cake and when cooled drizzled with powdered sugar frosting. your apple/walnut recipe is the closest to what I remember having every end of season harvest of apples for dessert as a teen having dinner with my family. My nans cake would be almost a cross of your apple cake and an apple fritter cake but with dates added to her recipe.
My mom was a wonderful cook and I am not trying to take anything away from her. However, my mother in law was an amazing cook and I have never eaten anything that she prepared that didn’t melt in your mouth. Oh my goodness, her chicken and dressing was like none you have ever tasted and her chicken and dumplings were the best you could have ever eaten. They have both been gone for many years now and I still think about what wonderful food they made.
My mom made this all the time...she used bllack walnuts...think i will make it for Christmas this year...her way! Thanks for the reminder! And Happy Thanksgiving Greg!

Hello Gregg, this apple cake recipe sounds delicious, except for me I'm a type 2 diabetic. So I'm going to substitute the sugar for Stevia / monk fruit which is diabetic friendly. I'm going to give it a try, I know it's going to alter the taste a little bit. But it's better than not being able to have such a delicious dessert. I've become accustomed to the stevia/monk fruit sweetener. So I think it will taste just fine. I will try to post my feelings about it after I make it. So in case your other viewers are dealing with the same issue as being diabetic.

This is the consistancy of a fruit cake when putting in the pan but the apples will let off som juice so I think it will be more tender.
Question do we have to add coconut, or can we replace it with oatmeal.
