I made this last night and it was fantastic. It is one of the most savory dishes Ive ever eaten. You really must have it with the yogurt because it is such a rich food, and it makes it less overwhelming (so you can eat more than a few bites of it.) 10/10 Also! I cooked my eggplant in the air fryer and it did not disappoint. 400°f for about 8 minutes.

In Syria, they have almost the same dish ,they call it fateh bathenjan . They use pita bread, with a sprinkle of roasted pine nuts on top of the dish , pomegranate syrup is added to the tomato sauce for sweet tanginess .
Its an originally Turkish dish but in the Ottoman Empire most dishes that where made in the palace of the Sultan soon after spread to most meditereanian countries and also syria

The quality of your videos is phenomenal! I think the name of this dish comes from Arabic "Thareed"; bread is crumbled and added into meat broth. It's a 1000+ year old dish.

The ingredients are very simple and common in the whole West Asia so it 's very very probable somebody else came up with a very similar dish somewhere else nearby. So you need to take it easy

Aubergine is weird ,because if you don't fry it before cooking it then it will be horrible ,but if you fry it like in this video then it will be something out of this world. I always fry Aubergine first before cooking it.
deep frying eggplants is unnecessary and adds a lot of calories for nothing. Eggplant tastes the same if you cook it with meat or bake it with whatever you are making as long as you give it the time it needs. I would argue that you can actually taste the good eggplant flavor even more when you prepare it in any other way than frying. The oil acts like a barrier on your tastebuds.

Ideally fried, but if you are too concerned you can coat them with a bit of oil and bake them in the oven until nicely browned.

It helps with the texture for me when you fry it but I totally agree. It kind of works the same in the air fryer too
