Been making cornbread for decades. Have several versions. And I like a sweet cornbread once in awhile at breakfast time. Never thought of adding crushed pineapple. That will be in the next batch for sure! Love the idea. Thanks, Ange.
Ok, it just came out of oven, I waited 30 minutes and has to take a little slice out, it’s just as delicious as you raved about yours 🤣. I didn’t have jalapeño, and have seriously never cooked with it, so added a few chopped green onions. I thought of adding cayenne pepper but didn’t. My cast iron fry pan is only 10” so I used my porcelain coated cast iron casserole pan for the remainder of the batter. They cooked in about 50 minutes. The recipe is amazing, very moist and easy to swallow (unlike typical cornbread). Thank you for sharing . 👍🏻
This looks delicious. I love jalapeno in it too. I cant wait to make this. I've never had a good recipe for homemade cornbread, just the box stuff. I'm making your recipe real soon. It looks delicious.

Give it a shot and see what you think. Everyone who tries this cornbread says it’s the best cornbread ever! And you can barely notice that it has corn in it.
@@ChefAnge Ha ha! that comment! I used to daycare a little boy and I would bake cornbread, and I made the sweet kind, he had never had it before and would ask for "more cake", but I would tell him "It's NOT cake" and now he is a grown man and we all still call cornbread "not cake".

yeah, I'm on the bacon grease train, too - _very_ hot bacon grease. That sizzle of adding the batter is so satisfying!!

I haven’t tried it but think it would come out just fine. I wouldn’t make any adjustments but I’m not a great baker! 🤣
I actually like my cornbread _dry_ haha - and with honey butter.
