生魚片沒有在吃皮的,然後不去鱗沒辦法做部位區塊切割啊,海魚的鱗片層很硬

為何旗魚去皮都多切那麼多肉丟掉??
紅色的是血,味道會很噁,所以暗紅色跟黑色的地方會修掉。
不過這位師傅前面影片有些的確也切比較多掉,他到最後修飾起來就很好看,就看老闆或板前長做事的風格,通常,包刮骨頭都會拿去熬湯,不過價格跟生魚片比就是有差。
對了 如果靠近肚子 切多一點掉是因為魚肚有一排刺,所以生魚片或炸魚塊的料理通常會切掉
