It’s amazing that the restaurant cooks the type of Udon or Soba that the customers want with the soup base, but customers take whatever there is as a “buffet-style” eat whatever they choose.

Looking the well-trained, systematic staffs in the kitchen doing their work is amazing, step by step for each preparation and hardly will go wrong. The udon, pork belly rice, am sure it taste super amazing. *Glup*

This Udon making factory is awesome! If it was a self-owned restaurant, the owner or chef would have to prepare the noodle dough all by himself to make the perfect Udon according to the texture and thickness he desires.
This is such a masterpiece of Operation. Every staff member is efficiently distributed, the main dish is prepared professionally while customers has the freedom to pick and choose the extras. Must be exhausting to greet every customers though

Eu já estou achando que japonês come mal! Se eles morassem no Brasil seriam gordos! Acho que o bom do Japão é a segurança e falta de criminalidade! Dá pra ver que é uma família trabalhando, o irmão mais velho esquenta o macarrão grosso, a irmã seca o macarrão e os país são os grandes cozinheiros do local! Fui verificar quanto custa 800 iene em reais, dá 31,71 reais. Com esse valor já dá pra comer em rodízio de carnes! Conclusão: japonês passa fome!
I love binge watching these Japanese restaurants from before daybreaks preparing all the chicken/pork broths to cutting all the much needed vegetable ingredients, and especially touching family-run by husband/wife over several decades and still going strong! Of ALL the ones I've watched, I think THIS one is the most efficient! It's such a smart move to make customers moving in line to get their orders, it's almost like ordering at Starbucks, there's a particular way that EVERYONE knows and this really speeds up the process for every customer and makes more money for the restaurant! They ask you HOT or COLD, and they fill only about 1/3 of the broth, and customers can customize their own toppings just like you do creams and sugars once you receive your beverages. Such a well orchestrated run restaurant and their PROCESS which should set as a good example for other Japanese Mom-&-Pop run restaurants!

ここの肉うどんは美味しいので、お気に入りです。
注文を受けてうどんを出してくれる店員さんが忙しくても何時もテキパキとして好印象です。
店員さん皆さん元気で、入退店時には店員さんが明るく挨拶してくれます。
お店も明るく綺麗で居心地が良いので最近うどんはこちらばかり食べに行ってます。
いつも製麺所の前を通るので気になっていました。生姜を擦ってくれているので、とても安心して食べられます。
行ってみます。
岡山に生まれ住んで50年以上。岡山のうどんチェーン店の中で(個人的に)今1番お気に入りなのが桃山亭。

よく研究してマニュアル化されてますね。手打ちに近い製麺機は研究の賜物でしょう。添加する材料が殆ど計量器経由と言うのが凄い。お客さんから期待される味は裏切れないということなんでしょうね😃

昔のさんしゅうあんのうどんもう一度食べたい
あの黄金色の出汁が最高に美味しかった!セルフと比べるとちょっと高めのお値段だったけど、その分満足度高かったな。
この店実家の近くだわ・・・。年末行ってみます。
ただ、この近くの名玄がセルフ発祥らしいので、そっちも行ってもらいたいです。
私はセルフでは名玄が1番好きです!

でも、仕込みの担当ちゃんとうどん担当と調理担当に分けてますね、うどんは店主さんで調理は女性パート?さん達に、見事です😊
