1lb carrots
2cups all purpose flour
2tsp baking soda
2tsp baking powder
1tsp salt
3/4cup vegetable oil
1cup brown sugar
1cup granulated sugar
2tsp vanilla
1tsp mixed spice
2tsp cinnamon extract
3 eggs
1/2cup raisins
1/2cup peanuts

Goodday, are you sure the portions for the baking powder and soda are correct? Because I used them and it made my cake bitter and soapy regardless of how well incorporated it was in the flour
Reduce the baking soda to 1 spoon instead of 2. I knew from the start that 2 spoons of baking soda was too much.

Yes you can but melt it and let it cool, oil is preferable though
