Maybe consider a couple of miniature donkeys or mules? Pros and cons, though. Biggest pro is if raised with goats/sheep and "bonded" to them, you won't be having much problems with the foxes at a lamb buffet. Donkeys and mules will tear their asses up! Theyre great for fertilizer, sure on their feet up the mountain and required very little upkeep. Cons, they'll eat your grass and those rounded hooves might punch some holes in the wet ground. Theyre a little harder on ground than cows in the wet. If not raised young with sheep/goats, they'll shake them to death like the foxes. Ive found the males, both uncut and gelded, seem to do better as guardians. Just my personal experience. Some may say different. Your Dad wasn't too bad 😂😂😂😂. I've probably said worse in a good day.

Glyn if you ever find yourself in Dublin visit Newbridge house in Donabate (it is nowhere near co. Kildare) . The council have a great set up there with all sorts a animals for the public to see.Might give you some ideas. I am thinking maybe hens and ducks. The goats will do well on poor ground. The last thing they will eat is grass

Chickens for the eggs, llamas and alpacas for the fleece, NO emus, they can be viscous. A couple of small ponies would be nice if you can find someone to trim their hooves.
I have just been on FB marketplace here in NZ and you can purchase a roller that you tow behind the tractor for NZ$200 - if I can in little old NZ you must be able to find something in Ireland - rolling is a job done every year in hay/silage paddocks so it is something you will need going forward and it is cheap
Glad Tom and Jerry are castrated. We had dairy goats for 10 years and they are always up to something. Males will " self-pleasure ", and wouldn't that be fun to explain away to tourists !! My father would never let Mom keep goats on the farm; " anything but a goat, " he'd tell her. When he passed I bought her a few small billies to keep her interest in life going forward. The adventures we had over the next 10 years !! She's 92 now, and I sold the goats because she got badly hurt one night because she'd go feed them cookies at 2 in the morning. Now, she raises pheasants, quail, turkeys, ducks geese and chickens. We do stay busy here on the small farm in Kentucky; U.S. You might look into finding a few mini Silkie Fainting goats for your tourist venture. They look like Yorkshire Terriers, goat sized !
if you are going to have visitors on the farm - you will need a farm shop with your merchandise (T-shirt, sweatshirts etc) and frozen meat etc available from the farm and anything else you can think of or that can be supplied locally like the goatsmilk soap

Saanens are great sheep. Very friendly. Good they are neutered as a buck can breed your ewes ( but the fetus will not survive). Have fun with them getting their heads caught in the mesh fence, when their horns are longer. Rabbits are popular at a petting zoo, especially the Giant breeds. Maybe get a Zebu.

Adult goats are impossible to fence in. They are natures nomads.
