- On my last trip to LA, I went to see my buddy @owen.han to shoot a video together. We had a recipe planned out for a duck sandwich that didn't work because I couldn't fennel at the grocery so we decided to go with a duck Banh Mi instead. It was sooooooo good that I had to go an do it in a long format video to make it easier for everyone to try at home.
Here's the recipe:
Ingredients
Pickled carrots and daikon
2 pounds carrots (about 5 medium), peeled
2 pounds daikon radish, peeled
1 cup plus 4 teaspoons sugar
2 teaspoons salt
2 1/2 cups white vinegar
2 cups warm water
star anise
pickling spices
Duck Banh Mi
1 duck magret (or 2 duck breast)
1 baguette
2 tbsp mayo
cilantro to taste
1 jalapeños (thinly sliced)
1 green onion (chopped)
1 cucumber (julienne) forgot to add it in the video
Maggi seasoning
Infused honey
400g liquid honey
1 shallot
1 knob of ginger
2 stalks of lemongrass
2 chilli peppers
4-5 cloves of garlic
2 star anis
1 cinnamon stick
1/2 tbsp coriander seeds
1/2 tbsp black peppercorn

Homemade Viet mayo is a must imho. It’s not as sour as Kewpie, and some stalls will use a little bit of butter or margarine (🙃) as the fat in addition to oil. In Vietnam they even sell little mini banh mis with just patè and mayo as a snack. Drizzling the pan sauce over is a pro move, bc I’ve seen places where they have a pan underneath the grill grates collecting the drippings, and then they mix and reduce the drippings + water w a combo of oyster or soy or sambal, even pineapple for their “special sauce.”
