I'm Khmer, it's great to see you try the authentic Cambodian dish, Nom Banchok. The sauce you can add as much to the soup for your liking. The vegetables/ and herbs you can add as much as you like as well.

For the longest, I’ve been trying to decipher what the name of those Khmer noodles actually mean since aforementioned in my other comments that many of the names of Khmer foods are foreign and are named by the King, hence why the natives don’t even know what they actually mean, and your description of it being floral helped me to solve the puzzle! Noom Pahn Chowk (Three words) probably shares the same etymology as the words “Noon” in regards to Midday, “Pan” in Greek and Latin meaning fully, and “Chowk” in Sanskrit or Hindi meaning courtyard which all together can be interpreted into meaning “The Fully Courted Nick (Noon)” which evokes the image of a fortified, tamed, garden (Good Den) of Eden with a Tree aka King in the center! After all, a nickel is a coin in between two opposite coins (penny and dime), and the expression of “Nick of time” means the present in between the past and future, whereas Noon is Midday! If you noticed the ingredients are noodles (which is a seeded grain implying Newborn Risen King), fish (which is the origin of life implying the first Primal King), and finally the green sauce topped with fresh vegetables (implying the Green Earth) all mixed together! 🤓 So thanks for helping me solve this puzzle! BTW, “Noom” is a Khmer word for any type of dough that rises such as bread-which is feasible to see it as having the same etymology as the word “Noon” considering the word “Noon” in English is the time the Sun is highest in the sky like a Risen bread.🥖 Hence the Khmer word for bread is “Noom Pain.” In this video’s case, the “Noom” or dough are the noodles. 🍜

Actually the refreshing vegetable that you like is called Prolit in Khmer language. It is water lily stems. We can also stir fry it with tiny river shrimps or make Khmer sour soup. I love them in the sour soup than stri frying. If put them in soup, don't leave them too long in the heat to maintain the crunchiness. It is very smart of you to watch and learn how to eat from the local people. I saw some videos and I felt bad for them who do not eat it properly, hence, would not achieve the original taste of the dish. It is absolutely one of my favourites and we can eat it at any time of the day, breakfast, lunch or dinner. Some part of Cambodia do not add the reddish looking sauce into our Khmer noodle. I live in Phnom Penh and I only learned about this red sauce when visiting Siem Reap. They call it Sweet Sauce. I remember a relative who went to Siem Reap with me mistakenly thought it was another type of soup that is called Nam Ya (as red as Red curry but made out of fish, less dark color though), and he ordered just that for the Khmer noodle and the waitress was confused how someone just wanted the Sweet Sauce by itself in their noodle. Poor guy, he couldn't eat the noodle in the end as it wasn't red curry and the noodle was too sweet to take. That was how we learned about this Sweet Sauce that comes along with the Khmer noodle. If you go else where in Cambodia try to see if people give this extra sauce when you order Khmer noodle. Thanks for showing our Khmer food to the world through your video! 🙏
dont break the chili with your fingers ....if u forget and rub your eyes u get burn...just bite the chili,.,,the red sweet sauce you just put a spoon in...not all...and that white stem u like is the LOTUS Stem or water liily

Hello, so I'm Cambodian and we call other Cambodians... Khmer but pronounced Kh-Mai. So that noodle is called noom pa-johk and the soup comes in two versions that I know, maybe other ways. One is serve in fish curry soup but the fish is not solid so for me I prefer the chicken curry soup.We'll it's rice noodles I think and they usually add vegetables just for flavor and texture. Btw the white crunchy thing is lotus stalks, it adds a good crunch as well as the green string beans... idk if you tried pahok sauce but it's famous in Cambodia but it's fermented fish. We usually use it for cooking or make bomb.steak sauce. Enjoy

It’s a lotus stem. The red sauce you add to your liking depending on how sweet you like it. Only thing missing is cucumbers and bean sprouts
