sod easy care plants will have to weed around them. Most mulch will not stop all weeds to.

What a deal: you pay them to take the rough cuttings--they make compost and sell it back to you. Good deal for them. If you have time, you can use your own compost maker, and make your own, store it and use it when you have enough. But time is money, I can see why you might want to do it this way.

Why would you NOT compost the dead grass?? That's crazy!! Send it off or someone else to compost your grass, along with thousands of others, and God only knows what they put on their lawn!!!

So much wasted time and energy. Me I'd do it the lazy, cheap way.
Skip steps 1 and 2, sheet mulch over the grass cover with wood chips 4-6 inches wait til spring (The turf will have died and started to break down) and pull back wood chips and plants into the dirt below the the cardboard or paper. Push the wood chips back within 4-5 inches of plant DONE

This is to much work. All I did was spray round up kill the weeds along with the old ugly lawn. Then plant the saud or the seeds. And that’s it.
