I live in cold water country on the Oregon coast, and I bleed EVERY fish as soon as it's landed. Yes, it can be messy and makes for more cleanup, but it definitely makes the filets taste better. We have snappers of all kinds here and we bleed them. It certainly can't hurt.
I've always iced because I saw my old man and his mates back in the 60s doing it with South Oz snapper. They used fresh water ice in a salt water slurry though. I'll have to get a chest freezer, make my own salt water ice

Definitely! As a spearfisher it's pretty much the norm and really easy and clean since your doing it underwater. Best fish ever!
