Easy Chicken Saltimbocca

I want to share with you an easy chicken saltimbocca recipe that my kids and their significant others both enjoy. I'll link to my ciabatta recipe video if you want to make that as well. BTW, I used the seasoned cast iron skillet from the previous video and nothing stuck and it was super easy to clean.

Here is the ingredient list:
5 Thin sliced check breasts (I had 1.25lbs in this video)
10 thin slices of prosciutto
15 sage leaves
15 rounded toothpicks
2 cloves of garlic
1 cup of chicken stock (with flour to thicken if desired)
1/2 cup of pinot grigio
3-4 Tbs of butter
I package of sliced portabella mushrooms
Fresh sliced mozzarella
Olive oil for frying
A bowl with flour salt and pepper mixed in
Salt and pepper to season.

I’ve never tried pinning the prosciutto and sage to the chicken while frying it but that’s definitely something I will do next time. I like how you added mushrooms as well. I’ll have to make this for my mom this is one of her favorites.
