    Spaniard here, my parents were from Valencia, the home of Paella, and I have enjoyed every kind of Paella ever made and I can tell you there's no such thing as a "traditional" Paella. Every mama, including mine, and many papas too, made Paella with what ever ingredients they liked and every one was absolutely beautiful. I've even heard some purists say that Paella should either be meat or seafood but not both. BAH humbug, I've eaten Paella with both meat and seafood, even with snails and some vegetarian as well. So never mind what the "recipe police" say, some people say the Earth is flat too, probably the same people who tell you how you should cook Paella.
    I hope we get to see you cook one on the show one day, YOUR way.

    Jean, you have become my go to chef and teacher. One of the reasons is because each video is real. You don’t edit out all the flaws. It would have been easy to redo this video, but leaving it as it was encourages those of us who find ourselves a little overwhelmed with out project and we aren’t doing a video at the same time. So, thank you for keeping it real.

    I saw that recipe. There was nothing wrong with recipe. It was closer to being authentic momma's home cooking than 99% of corn bread recipes I see.

    One of the reasons I love this channel so much is chef reminds me so much of when my grandfather was teaching me to cook. He used to be a baker before he joined the military and he wanted me to, not just learn to cook, but to enjoy it too, so he made it so happy and fun, and he was adorably enthusiastic and funny just like chef J-P. He told me it was important to learn about flavouring so that I could create my own versions of recipes. He showed me how to work out alternatives for things some people don't/can't eat, that won't rob the recipe of it's flavour, and how to trust my instincts on what a recipe might be missing. So our cooking sessions began when I was 7 years old, and the last time we cooked together was 8 days before he passed away when I was 24.
    I not only am getting great recipes, but some pretty awesome nostalgia

    caro chef io ti seguo dall'Italia, anche io sono un cuoco, e sono italiano, e accetta una piccola critica, i saltimbocca si fanno assolutamente con carne di vitello, se fai in italia i saltimbocca con il pollo credo che molti si arrabbieranno, ma la cucina internazionale è sempre un poco complicata, ma detto questo, sei sempre un grande chef.
    dear chef, I follow you from Italy, I am also a chef and accept a little criticism, saltimbocca is absolutely made with veal, if you make saltimbocca with chicken in Italy I think many will get angry, but international cuisine is always a little complicated, but having said that, you are always a great chef.

    I know. I was upset when you took the paella recipe down. I went to make it and it was gone. Luckily, I had printed out the recipe when I watched the video so I still was able to make it. Best paella ever. Who cares that it's not traditional! I believe you stated right during the video that it wasn't a traditional paella, so they have no excuse to ruin it for everyone else.

    Spaniard here, in Spain we usually say "that's not paella, that's rice with things" to every paella that is not traditional. But hey! most of spanish people doesn't really know what the official traditional paella recipe is (I think it has rabbit, chicken, green beans, white beans and sometimes artichoke or something, but I'm not an expert) As many spaniards said in their comments, no truly spaniard will complain to a big plate of "rice with things", we all have on sundays at our homes, and every family has their recipe. The thing is that the paella its a sort of Spanish pride cause its the dish that reunite the family on sundays, usually with the mothers, and grandmothers cooking (with love of course) then calling everyone to eat and its a very intimate and familiar recipe. But don't let that false criticism get you, chef. Please, make your Paelle, à la Jean-Pierre. We all wan to see it!! Love your channel, and your way of cooking, it's simply the best on youtube!

    JP, I was ok in the kitchen. I can bake, not decorate.. I found your channel in the past couple of weeks. Because of you I have learned how to actually use a knife. How to store and prepare my vegetables as soon as I bring them home and how to butterfly chicken. I adore you! You make it fun, easy to understand, and I want to thank you from the bottom of my heart for this. Everything I have made wasn't perfect, but it was so good who cared if it fell apart or didn't look exactly like yours. Please don't stop what you are doing. People like me need you.

    Great video, Chef!! Reminds me of the night I swallowed a toothpick. You see, my sister cooked a chicken dish for dinner one night. As I was struggling to swallow a mouthful, she announced she forgot to remove the toothpicks. Lessons learned: chew your food well and use toothpicks with frills. 😆

    Hello Chef Jean Pierre, thank you for mentioning that life is complicated, but we are not going to talk about that, this is a cooking show. I agree so much, cooking is the most relaxing hobby there is, fun and satisfying. This looks delicious, what I loved about this recipe is like you said, quick and very good.     With all the problems in the world and in daily life, I recommend going to Chef JP (and Jack). They'll put a smile on your dial and a warm satisfied feeling in your stomach. I must admit, I don't make so many of the dishes despite my best intentions to do so, but I've learned lots about clarified butter, the maillard reaction and always cooking your onyo first (unless with bacon) and have had a good laugh along the way. Thanks Chef, keep up the good work. 😁

    I made this for dinner last night. So simple, so elegant, so flavorful! I served it with a side of root vegetables sautéed in butter. It was perfect. Thanks, chef!

    I remember the paella video, I tried it and loved it. I got all my friends over and had a big dinner party with the paella as the centre piece. I then wanted to cook it again a while later and couldn't find the video 😱
    I am so happy to see its return, as it is a true favourite of mine, and I always like to have the video going as I cook it

    I made this with the goat cheese polenta. I feel like this would be good with chicken, pork, or veal. If my mother-in-law wasn't coming to dinner I would add a little chili pepper flakes to the spinach and tomatoes. I feel like the prosciutto/sage would work with a halibut or cod, but I'm not sure the toothpick would work well with fish, but I think the flavors would.

    I watched and luckily wrote down ing., and I made "your" Paella a few days later and It was definitely delicious!! "Recipe police🤬" How boring would life be if everything was exactly the same?     There's no wrong way to make chicken saltimbocca. Every chef has their unique take on it. This one looks good to me. At the casino I work at, we take chicken breast marinated in white wine, flour, salt and pepper, grill both sides on the flat top, put it in the walk in to cool down.. next day we add sage, prosciutto and then top it off with provolone cheese (we prep the day before). The sheet trays go into the oven at 250 for 25 minutes to finish it the day were serving it, and we make white wine risotto that day that goes on the bottom of the serving pan and a beurre blanc sauce that goes over it before it goes out. This is just one way of doing it. Anyone that say's the way Chef Jean is doing is wrong, don't know what their talking about.

    Nah, Chef, your regulars love when you repeat things, it's how people learn, and what makes this channel so cool. Love ya work!! And ignore the recipe police. They're everywhere. People with no cooking experience trying to tell a Michelin trained Chef he's wrong. It's ridiculous... Never change!! Can't wait to meet Jack one day too... if he stops eating the tucker before we get to see it!! 😂🤣😂🤣
