The fight was not skipped, it was like that in the original, but they skipped a lot of Eris and Kazuma talking and bonding (I won't say what in case they adapt it later but it was something important) and a bit of darkness scenes to make her disappearance at the end more shocking
Supplementary info/LN changes 1:44 - For those Dragon Quest fans, Eris says the famous death/game over line. They cut the whole interaction from Eris, where she explains what happened and that the Kowloon Hydra is incredibly tough (it tanked Explosion and in the previous chapter, Explosion is capable of destroying a large mansion, but the monster was bigger than expected and it resurfaces every ten years after recovering it’s mana.) This Hydra is a ritual, where the Knight Corps come every decade to put it back to sleep, but they can’t kill it, so Darkness is being crazy to want to kill something that can’t be killed (Eris also says that Darkness is blaming herself for his death and was taking it hard and she gave another hint, which is likely cut because of a later scene, so I won’t explain further.) 3:47 - Kazuma lost 30% of his body, so they showed naked Kazuma earlier, because he was missing his equipment (hence Ms Kazuma/Kazuma-chan.) 5:44 - I think you mixed them up, since Soketto is a lady and the fortune teller, while Bukkorori is probably who you thought of (who was her stalker and Megumin’s older ‘brother.’) There was a throwaway line where Aqua killed a bunch of fish in fish tanks, because she thought purifying the water was smart and Darkness looking at the reward for the thieves desperately (also the guild planned on asking for Vanir’s help, so Kazuma hid next to Aqua at home, to avoid Vanir’s precognition.) Much like with Beldia/Dullahan, Darkness was meant to be bloody from the Hydra, to show her desperation and it’s endurance and why Kazuma was fixing her stained and broken armor. 9:18 - Reference to KonoBakuen. In the Hydra fight, Kazuma’s gear melted so he only had casual clothes and his defense was low, Megumin cut off 6 heads and Yun Yun cut off two, after the fight, Darkness got plastered for the first time and even offered some to Megumin, and they bought the same crabs from S1E9 as a gift for Darkness (they also changed Darkness’s reason for being absent, to leaving the Party.) Lastly, as the Party Swap chapter for S1 was cut, this marks the first time Rin (Dust’s Party member with a tanuki tail) talks and you get to see the Intermediate Mage properly (I believe Rin’s VA is the same as the Gacha, just like the other VAs.) 18:16 - The LNs do this a lot, where stuff is offscreened, including him learning Basic Magic and other skills (even in Akatsuki’s other works, a major fight is offscreened the next chapter and a canon speedrun, because the MC was told what a speedrun is, from his gamer friend.) Also, S3 was likely delayed due to a bunch of stuff, like Kadokawa’s previous mindset, Covid, KonoBakuen, and Akatsuki’s other 2 works getting animated (there’s potentially Combatants getting a S2, so they wouldn’t self sabotage and air both at similar times and there’s multiple spin-offs to adapt still, like Continued! KonoBakuen and Dust’s Spin-off series.)
They REALLY are making me like Darkness this season....idk why but now i think, like Megumin, she should get her own show. It's kinda hard cause i'm part of the 1% who always liked Aqua the most, but the story really makes sure to show she hasn't any drama or anything serious at all involving her LOL Lalatina once more is causing trouble, and now the gang have to go after her. Also, the guild's teamwork tho. That was REALLY cool.
Through some dialogues from short stories and volumes of the novels you can basically know everything about Darkness's past except how she became a masochist.
From what we know, he spent most of his childhood in his mansion, sometimes going to the capital where he met and became very close to Iris. Then at 14-15 years old she met Chris and went on adventures with her until she joined Kazuma's team at 18.
Time to go get our girl back!
