- Delicious jerk chicken, jerk rice and veggies. There’s a video on how to make the jerk marinate, I will link it below.
Jerk chicken:
Chicken leg and thigh
Powdered jerk seasoning
Onion powder
Garlic powder
Jerk marinate
Extra scotch bonnet (optional)
(Add pimento leaves to the grill for added flavor)
JERK SAUCE:
Add 3 tbs butter to sauce pan to melt, add 2 tbs jerk marinate and saute, add pinch of powdered jerk seasoning, 3 tbs brown sugar, 1/4 cup ketchup and half cup freshly squeezed orange and or pineapple juice.
Allow to simmer until thickens, if it’s too thick loosen sauce with 1/4 cup water.
Jerk rice:
2 tbs butter
3 tbs jerk marinate (blend a mild marinade for the rice if you can’t take the heat)
2 cups coconut milk
Scallion
Thyme
2 cups water
4 cups jasmine rice
Salt to taste
