You have a walleye. The best way to tell is, the white spot on the bottom of the tail fin, the black spot at the back of the dorsal fin, and the eyes are cloudy no pupils.
I'm really surprised you caught a bowfin. They are not common in Missouri. Mainly only found in the counties that border the Mississippi River. I tried catching one this year with no luck.

The white blotch on the base of the tail is a great indicator for a walleye. Saugers do not have that white blotch on their tail fins.
