Pasta Grannies meets 97 year old Albertina from Bologna

- What better gift than handmade tortellini? That's what 97 year old Albertina gives her family for Christmas. Pasta Grannies met her a few days before, busy making pasta pretty much the same way she's done for 90 years of her life. These days she uses a pasta machine and finds a freezer convenient.
Her tortellini filling is 200g mortadella, 200g prosciutto, 200g pork loin and 200g 30-month Parmigiano, nutmeg, salt
Her meat stock uses beef shin, chicken, celery, carrot and onion.
I miss my nonna su much. She was from Ferrara and i grow up making tortellini with her. She used to prank my nonno by filling a tortellino with a raw garlic piece. Sunday was a special day. I miss you nonna.

My Grandma's specialty were tiny tortellini that she wrapped around her little finger (pinkie). She made the last batch (for 12 people) three days before she died, aged 96. They were always served in broth.

Wow! Albertina is so skillful in making tortellini. Amazing.
When she taste tested the raw mixture it gut punched me right in the feels and memories. My friends thought it was so weird and gross my mama and grandma did this with homemade fillings and meatball mixtures but to me it was normal. I still do it to this day. As my mama says “a little taste won’t hurt nothin”

I love all the grannies cooking happily; reminds me of my own. Although she wouldn’t understand neither English nor Italian, and now that she is losing her memory and have forgotten to cook complicated dishes, I’m sure she’d enjoy watching this with me. I can’t wait to share these videos with her!

La signora Albertina makes tortellini that look so much like the ones my Bolognese grandmother used to make, although the filling of my family's recipe contains (I believe) more ingredients, and we keep passing on a contraption (that my grandfather made), to cut the pasta into circles instead of squares, which makes tortellini a little less pointy. I also want to say to all the unlucky who haven't ever tasted tortellini fatti in casa like these ones, forget the notion of tortellini that you might already have, perhaps from a restaurant or store bought. Everything, from the taste, the consistency, the aromatic flavour of the spices, puts this dish on a class of its own. This is, truly, a meal for the Gods.
If you ever get to that age, we all hope to be in this shape. I am speechless. 🥰🥰

I had the pleasure of growing up in Emilia with my grandparents and aunts. I think everybody should have the luxury of waking up on Christmas morning smelling tortellini (we called them cappelletti in my own town).

As always with Pasta Grannies, it is such a gift to learn from people whose knowledge goes back over 100 years. If Albertina, who is 97, learned from her grandmother (who was probably 40-60 years old) when she was 7 and 8 years old...this is beautiful. Thank you!
