    What is Maseca?
    Maseca is a brand of instant corn masa, that is basically dried corn that is ground, cooked in slaked lime and water, then dried again.
    What is slaked lime?
    Slaked lime is another name for calcium hydroxide.
    TAMALE STEAMER POT

    INGREDIENTS
    (CORN HUSKS)
    1 to 1 1/2 lbs Dried Corn Husks
    **Some corn husks will not be usable so its good to have extra
    **separate and rinse husks well before soaking
    **steep in boiled or hot water for at least an hour, overnight for best results
    **corn husks should be pliable enough to fold
    (MASA)
    4.4 lbs Maseca (dried corn instant masa mix)
    *corn meal or corn starch will not work as a substitute*
    1 lb lard (melted)
    5 to 5 1/2 quarts hot water (keep extra just in case masa gets too dry)
    1 to 1 1/2 cup guajillo sauce puree (see below for recipe)
    4 tsp salt (or season to taste)
    1 tbls Chicken bouillon powder (optional)
    **Mix until masa is fluffy and soft
    GUAJILLO SAUCE
    4 to 5 dried guajillo chiles (clean and seeds removed)
    1 small onion
    2 to 3 cloves fresh garlic
    1/2 cup chicken broth
    ***soak chiles in boiling water for 30 minutes or until pliable and soft
    ***blend all ingredients together until pureed
    FILLING
    5 to 6 lbs of cooked meat of your choice or cooked mashed beans and cheese are great too.

    In the history of different foods, you find they come about by the people of a region using what is readily available. Your tamales may not exactly match what others call authentic, but whatever you prepare and serve in your kitchen is authentic to your family. Recipes vary from region to region, even from household to household, and they evolve over time, it doesn't make them any less authentic. The new variations people develop eventually become authentic to succeeding generations. You have the best cooking channel, you are doing great work, nothing inauthentic here 😊.

    I am 64 yrs old and have been making tamales since I was a little girl with my Mamita and I make mine like you but I use the tamal mix in a pinkish brown bag (it has a tamale on the bag). Your tamales are authentic!!!!! Eres Mejicana son authenticos!!!! So proud to see women like you making these recipes and are carrying on our tradition of tamale making, I won a national contest with my tres quesos con rajas tamales on the Food Network with Emeril Lagasse who hosted the show, I am so proud of our heritage and that it is being shown here on UA-cam for all to see!! Gracias!!!!!

    I am so glad I found your channel. I have been helping my Mom make tamales since I was a teenager. We would start the day after Thanksgiving with cooking the meat and rendering the fat from the pork roast for the lard and chicharrones. The next day we would make the sauce and masa and assemble the tamales. When she passed away last year we couldn't find it in our hearts to carry on our yearly tradition. It was also a large endeavor as we would cook 6 to 8 pork roasts and buy 60 lbs of unprepared masa. Watching your most recent videos cooking the chile con carne and the tamales has put that desire back into my heart. I will be getting the family back together again to honor my mothers memory and continue our family tradition that has been going on for over 40 years. You are an inspiration and I thank you for that. Much love.

    I tryed something different today.
    My grandkids love breakfast, so i made breakfast temales.
    I made the masa put it on the corn husks- refried beans, eggs, tereso sausage ( added butter in sauage), Jimmy Dean sausage, shredded Muenster cheese, and half a pack of taco seasoning.
    They came out kind of soft, so I put them in the oven at 375 for 40 minutes and it firmed them up... served with a little bit of sour cream and sliced black olives online, and a heaping glass of OJ. The kids ate them up quickly and beg for more

      Before my grandma passed 😔she made this bread kind of pudding for Easter l loved it , but l wasn’t allowed in the kitchen , l was hoping maybe you know what I’m talking about. Thank you sooo much for your recipes so thankful l found you , Blessings.

    I had a grandmother who ran out of her usual cheddar and used cream cheese in her tamales instead. They were a hit and ssssooo delicious!! She made them that way every year following. Love your channel!

    My mom has always made bean tamales for me ever since I was little, I am now 60. I was a pickey eater and have never really preferred meat, so beans with cheese tamales were special for me, quite frankly I make them now as well as meat. My entire family loves them!! 😊 Honestly I think they are more common now. Love your channel, you are a very good cook!

    I think that's what makes it authentic, using your knowledge and using what you have. Chile relleno and Tamales are my 2 Mexican food weaknesses. I will be trying this once our 90 degree weather dies down. tfs your wonderful recipes.

    In regards to authentic, classic or original. Now it may be considered authentic BUT back then it was what ever they had. Things like pork in tamales was because they had plenty at slaughter time in fall or winter. Please keep on with what you do in regards to preparing food from your childhood. Your recipes are amazing and the ones I have tried have been excellent. Thank you!

    I just sent my mom this video because she was talking yesterday about making and freezing tamales soon to store for the holiday season.     Thanks for this! I've only made tamales twice, and this reinforced what I knew, and gave me some tips.
    And girl, these are totally authentic! Every Latina mama that taught me anything in my life time, has always used what they had, and improvised!

    Thank you for sharing! I make tamales the same way, but I add some baking powder to make sure it's more fluffy. It's how my husband's grandmother showed me.

    I’m Mexican, French and Cherokee Indian. I always use Maseca ( lard ) . My mom did also. I like adding the chili sauce in my masa mixture too. I have canned pinto beans and will use these in my tamales. I’m not authentic either but I love my way of simple cooking. I use a caulking spreader. Or cement spreader I bought a tamale spreader on Amazon. Very quick .

    You could use a wide mouth canning jar in the steamer to. Put water in it for more moisture.

    I am a born and raised Texan, (Amarillo, San Antonio and DFW), who now lives in Pennsylvania and I really miss tamale season because you can find them literally EVERYWHERE!! I miss this kind of food in general...I really do. Maybe I will start a tamale season tradition up north here for my PA family. Thank you for sharing this recipe...I will give it a try!!

    I’m from the Rio Grande Valley where tamales are available 365 days a year at Delia’s Tamales in a million different flavors but now that i live here in the Houston area finding tamales is hard even more so finding good ones! I may have to try doing it myself with your recipe.

    love to see and hear you talk about your family traditions. My family also used the "dump & splash" method of cooking... lol. You "felt" more of how to cook something rather than use exact measures.

    If I ever had all the ingredients for anything I make I'm pretty sure I'd fall over dead. I didn't have shredded coconut the other day for an Indian recipe so I used a little sugar & milk to at least somewhat fake the flavor. When I make spaghetti sauce and need red wine I'll often use coke and vinegar. It's all about adapting and that is what makes YOU an excellent cook (along with your parents and grandparents). Love watching your videos. I grew up in New Mexico and your quick rice and powder based enchilada sauce are my go to's in a pinch. You nailed them both!

    I'm also from texas and i love bean and cheese tamales, we used to have them all the time (we bought them lol) but i got married and move to california and OH MY GOD i miss the so much, they dont sell them (maybe not even make them) here, bean and cheese tamales might be a texas thing lol, i dont know. what i do know is i'm so glad i found your video!!

    I just saw that I had posted on this same video 4 years ago. Well, I'm back. My wife and I are making tamales today (husks are soaking for about 6 hours). Just like you we're using leftovers and what's in the freezer, fridge or pantry. Leftover chili verde that I did with ginormous very thick & fatty pork chops/steaks in a slow cooker the other day (another waste not want not type dish); they're more stringy than a pork butt or shoulder but will be perfect for tamales. Because I used the slow cooker the chili verde salsa is somewhat watery so I'm using a cup of that in the masa and will probably add a can of cream of mushroom to thicken the rest of the salsa for the pork mixture. Adding batons of potato to those as well. Also have leftover pinto beans that I made in the slow cooker the night before the chili verde for bean & cheese. And finally, roasted Hatch green chile out of the freezer that we'll make green chile & cheese tamales with. Since all three are "green" based I'm adding a few tablespoons of Hatch green chile powder to the masa as well. I am always watching your videos. You're "real" and an inspiration. Cheers!

    I would like to find a recipe close to my paternal grandmother’s recipe, that she taught my mom. She would cook the meat and it would be a mixture of pork and beef, and after we cooked it , she would run it through the meat grinder and then cook it again with spices and seasonings . Omg they were melt in your mouth tamales.

    Thank you! This was great. I learned so much. I am actually making tamales for my first time tomorrow and have watched so many videos to learn as much as I can. I am a visual person and appreciate all of the different fillings and ideas you gave using what you have. My garden is running over with poblanos and I roasted them today and am going to make chiles & cheese tamales tomorrow. I learned I can freeze my excess masa from your video, thanks! I bought a 5 lb bag of fresh masa. I now want a tamale NOW!!

    My Mom Didn't Cook..I Learned How To Be A Damn Good Cook From 2 Of My Tias Who Loved Cooking..I Made Making Tamales One Of The Traditions In My Family..My 2 Girls Now Grown Look Forward To It Every Year..That An Making Menudo For New Years, An Baking Cookies, Bunuelos, Pies, An So On..Lol
