You must be referring to Country Life Vlog -- she is amazing and those videos are peaceful to watch. Veal is hard to come by -- but so are bushels of pomegranates and 10 different structures with built in wood fire pits. LOL.

I've made a similar blanc stew using pork. Veal, especially a shoulder of it isn't easy to come by and is very pricey.

Baby cows pinned in a tiny single cage to keep them from moving and not use they're muscles , to keep meat tender , is a cruel practice . Surprised Martha Stewart doesn't consider the separation from the mother and calf to be put in a narrow cage , to get them ready for market. They can't even turn around in their pen. Please consider consequences òf what that animal went thru before it was killed.

It's terrible, but that's what a lot of places do with chickens as well. Unless you specifically buy free-range, but it's hard to find that with chicken meat, only eggs.
