Looks great! A few recommendations based on my experience cooking Mexican food (as a Mexican :D).
1. Buy a tortilla holder and drop your tortillas in there after they are heated. Store bought tortillas cook in two phases. The first is on the grill (or stove) and that's just to warm them up. The 2nd is steaming in a vessel with the rest of the tortillas, this second step is critical to soft pliable tortillas (especially when you get lower quality tortillas).
2. After dry toasting the dried chiles I would deseed/destem them (as much as possible). The seeds impart a little bit of a bitter flavor.

This is amazinggggg!! I tried your previous version (the shawarma one) a couple weeks ago and I still can't forget it. We're just two at home and we live in an apartment, so I just used a small skewer, stuck it to a potato (with a side sliced to keep it leveled) and popped it in the oven. Won't be as smokey, but still, way better most things you'll be eating any regular day. Keep up the great content Gaz! Much love from Argentina!

One point of clarification, Mexico City has a very strong vegan scene and many delish 😋 vegan Al Pastor options… I love Mex City’s vegan scene. I’m from L.A. too where we have the best vegan food in the world and I can say Mex City rivals it. Btw, its “oh-REH-gah-noh, with the accent over the 2nd syllable. ❤

Awesome Gaz!!, I'm from Puebla, México and I made this dish with mushrooms aswel, and what you had made looks amazing, but I would give you another tip: marinared the mushrooms with the sauce before put it on the stick, that would take the flavor to another level.

Just made this recipe. I've been using oyster mushrooms for long time for making middleastern shawarma.
This recipe is simply amazing. Pressing the mushrooms is very important to let the water out.
Another important step is to roast the first side of the mushrooms without seasoning. Add the seasoning only when you are ready to flip them. This is important because seasoning and salt makes mushrooms release lots of water.
Other than that.... 8 tacos +wine.... Gaz is my hero 🙏
