The New Republic was without a big military force and most of it was on Hosnian when the system got destroyed by the Starkiller base. The war lasted only a Year because the first order had barely enough ships and power compared to what the empire had, so their grip on the galaxy was weaker than most people thought. Palpatine's plan involved the Final Order joining the First Order to create a new Empire, but the sacrifice of the children of Skywalker ignited a fire of Rebellion that had the entire Galaxy rise up to stop Palpatine's return.
The New Republic, of course, didnt go down in the blink of an eye. Most of it did, but what we dont see in the movies is that after the Starkiller incident the First Order launched an attack on the galaxy positioned strategically to make sure they had victory
I think a better idea would be to simply make a single show where each season is a different one, idk that might not work but it would be cheaper for Disney so I’d see that as most likely
