lol, I'm getting ready to go outside and film myself cleaning up my sunchoke bed, so I thought this was a funny coincidence. Apparently I'm lucky because I have the purple ones. I dig them as deep as I can get them (about a shovel and a half deep). I don't leave anything. And every year I have so much pop up that I have to do a big thin on them in the spring.
Grandma had these in her garden in the 80's. They are one of my favorite veggies and the flavor is great. They cost about $6 bucks a pound where I'm from so I bought a dollars worth and planted them. They are growing like crazy. Can't wait to start harvesting them.

For those concerned about gas, once you build up your gut biome and the bacterium that help digest them then the gas will subside. That's the reason why hispanics generally don't gas up when eating beans. So its just about acclimating your body to the food.
If you grow multiple varieties you can produce seed from the flowers. I grow 6 varieties in zone 9b, California, and generally get 6-10 seeds per flower after the finches have their way with the seeds. some flowers won't produce any due to incompatible pollen so grow as many varieties as possible to increase seed production and create your own hybrids.

A place that is filled with all your personal knowledge and experience to help people grow as they grow! And not to mention, get my hands on some of that johmpost you make. Don't cut 'em so early, folks. My tubers get 20-30% bigger if I leave 'em in until the topgrowth completely dies off. If they've still got green in the top, they're still pumpin' tuber growth down below. Don't hobble your yield by choppin' too early.
They may have propagated through your compost. I compost my sun choke trimmings separately, and do not put that compost in my main garden. It is reserved for the sun choke bed only.
Hey John, I'm growing sunchokes for the first time this year, and watching your video it makes me wonder if you prune the sunchokes back, do you think they would grow bigger tubers? It is a common practice in gardening to prune back to allow roots to grow, might just be a half cocked idea I don't know. I won't be able to experiment with it for a year or two.

They taste like a potato that is sweet. When you cook them they turn quite soft on the inside. I think they are quite good when roasted. Just a word of caution: they will give you gas if you eat too much.
They do, in fact survive freezing. I'm not sure how low on temps. Mine survived -13 (F) (that's -25 (C) to you normal folk) just sittin' in a half barrel out in the garden. They were packed in sawdust/wood shavings, not soil. Went out to check on 'em and they were frozen in a giant solid block. They did just fine. Still goin' strong now 8-ish years later. We don't typically get that low. 0 to -5 is normal and I leave 'em in the ground now. Only pull up to eat. They make it every year.

As the name suggests they prefer the sun. seeing as they can easily get 7-10 feet tall and I have seen some videos of them axing out over 15", I would no go further than sprouting them inside in a pot. As far as storing them inside, if that's what you mean? Using his method, that should work, just be sure to keep them in damp soil as he suggested.

Louisa Agate are they easy to store over the winter. We experience -30 F for weeks...so our garages are not good storage...we have been thinking about adding a root cellar...do slugs give them problems growing?

FluttterFox I think it depends on if you wait until after a couple of frosts to harvest. That will eliminate the gasiness. Also, I know farmers that cut the growth to prevent flowering to push energy into larger roots.

But before you write off sunchokes entirely, know that sensitivity to inulin varies from person to person and not all sunchokes contain the same amount of inulin.

I just dug up over hundred pounds today and still have a lot in the ground. They grow like weeds, very invasive! Love them!

Fyi you can feed green healthy looking sunchoke/Jerusalem artichoke leaves to rabbits. My rabbits love them.

Warning chickens love them had to plant them twice because the chickens dug them up and ate the first ones. Lol
Tip: lay down some hardware cloth around on the bed after you plant the Sunchokes. They will not scratch through the wire.

I literally can't get sunchokes. They are basically non existent in my area. I've looked at having them shipped but it's way to expensive. Sad.
