It is true that most of the time 1/250s is fast enough, but in the course of the days you might get a few with motion blur. Unless you want that look, you might want for 1/400s or 1/500 which works for most action work -- good compromise. I have also tried 1/320s it works... until it doesn't. Come winter one makes compromises. Aperture Priority is a great way of shooting, with most cameras. You are so - so right!

how do you do\set the exposure button?
It depends on you brand of course. For Sony it's a custom button you can configure. It's called AEL on/off. I have set it to button C1.
