The stuff from Tamaulipas is generally juiced using a trapiche and only the juice is fermented. They also use these weird Moonshiner still set ups with thumper kegs. Very unique place in Mexico for production.
@@differentspirits4157 The only other bottler I've seen that is traditional is from Lamata. Its a hard place to find anything commercial from for obvious reasons.
I might make a journey out there and check it out at some point, but only if I can line things up with the right people to keep things relatively safe.
