Ended up using some metal bathroom hooks, 1€ a piece, on a piece of wood that was protected from water and rain with marine varnish (lacquer ? How do you say ?) . Not super sexy but i'm satisfied. Very inexpensive.
Hey man im about to try making my own panniers for a long term tour with waterproof nylon. Does the back plate strengthen the load bearing capacity of the material at all? I don't want to buy it if it isnt necessary.

I used 1/8" doorskin 3 layer plywood for the back piece . Light , strong and the fabric is attached with small screws and lock nuts to the rack hangers at the top and external belts at the bottom.
Looking at having a go at making my own panniers as I can't get what I want here in the UK. This has inspired me to give it a go :) What sort of attachments were you using to attach to the rack? I couldn't see them very clearly in the video.
