Add baking soda to the water and cut AFTER blanching to preserve nutrients. Cook for only 3mins in the prepped sauce & remove cuz it will continue to cook from steam in the pot.

At the 3.49 mark, while putting the vegetables in the pot, she said "..before chopping the vegatbles, make sure you wash the leaf propertly". Some people wash their vegetables before cutting, because washing after cutting them, the vegetables lose some vitamins, reason the water turns green, that's some of the nutrients being lost!

You can also blanch without adding water. Just add your vege in the pot with some salt, leave it for 2 mins, then proceed to rinse with normal to cold water.
