  • ABC soup is a hearty soup made with potatoes, carrots, onions, and either pork ribs or chicken that is as simple as ABC and full of vitamins. The soup is known as ABC soup because it contains ingredients high in vitamins A, B, and C. Carrots are high in vitamins A, B, and C, while onions are high in vitamins B and C and potatoes are high in vitamins A and C. You can also add corn to this soup, but we don't recommend it because the taste of corn can be quite overpowering compared to the other ingredients in this soup. Every Chinese family in Singapore and possibly Malaysia knows how to make this dish, and we've been eating it since we were kids. We're sharing this recipe with you in case you've never had it before, and it's always a good idea to carry on the tradition.

    ABC Soup 马铃薯红萝卜排骨汤 Chinese Pork Rib Soup Recipe | Chicken Soup
    Ingredients:
    Serves 4 pax
    -------
    1kg spare ribs or prime ribs (you can also use chicken)
    A few slices of young ginger
    2 tablespoons Chinese white rice wine (omit this if using chicken)
    300g carrots (cut into chunks)
    2 medium-sized red onions (cut into chunks - add more if you want)
    500g potatoes (cut into chunks)
    Enough water or chicken stock to cover the ingredients
    Some salt to taste (we added 5 teaspoons because we didn't use chicken stock)
    A few dashes of white pepper

    I worked at a Chinese restaurant for like 2 years and my bosses parents were the cooks and man I had some good authentic Chinese food and this was one of the soups on the menu I would always get it with less pork and more carrots and extra broth with a bowl of white rice. I’m glad I came across this because I would love to try and make it myself .

    Fortunately for me, chicken stock plus corns, plus potatoes carrots both unskinned but washed provided two days stock of soup for the summer winter of Melbourne s chilly December. Oh so nice to drink soups ala winter styles. Sometimes I also try sweet vegetables like fennel and onions cauliflowers. Top ups are also just add ons to extend the broth serves another day or two. Happy as abc indeed

    Yes this recipe is an old tradition. I am from Indonesia and we cook this soup as well. But we add spring onion and it will smell and taste nicer 😊🙏

    Can we achieve the same result with a rice cooker that has the soup function? The chicken tends to bcome hard and dry, any tips to keep it tender?

    I also won’t add corn cuz it’s overpowering. I would add peppercorns to give it an extra oomph! Now I’m going to ntuc to buy the ingredients hahaha!

    hi ronald, since u have blanched the pork ribs so thoroughly at the beginning and threw away the water, wouldn't all the flavour of the pork be in the water thrown away? So how could the reboiled pork and the soup be tasty? thanks in advance.

      The beginning is usually the pork blood within the meat & surface of the bones being excreted out. Which is why the water is murky and has that dirty foam. But once you continue to boil, the true essence of the bones are extracted. And the soup remains clear but flavourful :)

      My grandma watched this vid and said the first step already totally wrong. Blanching pork rib should be only blanching, not boiling. The fire should be low and not let water come to a rolling boil. It should be hot water blanching until u see foam. Also that extra 10mins of rolling boil almost gave her a heart attack, she said all sweetness gone liao. 😂

    Adding in corn on the cob n sliced chayote adds in extra sweetness.Leftover soup makes a good stock for meesuah.

    After blanching the bones for so long and throwing away the sweetness of the soup, I think the ribs look kinda dried up. Wonder if the soup is still as sweet. Otherwise this is a yummy meal

    If you use the instant chicken stock to make the soup, the taste wouldn't be as "natural" as you described. 😅

    Guys, please never wash your chicken unless it dropped on the floor or is contaminated with soap or other harmful chemical. If you do wash your poultry, do it as carefully making sure that the water does not splash after hitting the chicken as salmonella (a bacteria that can be found in raw chicken) could contaminate your sink, clean plates, or other hazardous areas.

      Stop telling people not to wash their meat. You don't know how it was packaged and if the meat dropped on the floor prior. Always wash your meat and avoid cross contamination would have been better advice. Use different cutting boards for meat, fish and vegetables to further avoid cross contamination. would have been a better advice.
