These little two person cake recipes are coming just in time for when my son is coming back to me for the summer/fall from his mom’s. Going to be making all of these. Would this recipe work with Pears as well?
I' might tweak the spices for pears, just cinnamon, maybe a dash of cardamom. Possibly almond extract instead of vanilla.

I love apple cake and some fresh whipped cream would have complimented that marvelously. These recipes are dangerous for someone trying to reduce weight... much more tempting to make than a big cake!

Made this today, I followed the recipe exactly, but baked in my air fryer at 300F. It was done at 25 minutes. Excellent flavor and texture. This is a keeper.

A derecho blew through Ontario, its similar in destructive force to a tornado but instead of a vortex it blows mega force winds in one direction. There were also reports of tornado activity in some regions, I heard.😕

I made this yesterday and it was delicious! I didn’t have a 6” tin so I made it in a 5” Pyrex food container. I also added in 4 soaked dates, just because I love them in cakes.
This was so good. I’m definitely saving it for a rainy day

Glad I checked as it half way through as it didn't need the full baking time.
I've just made it and put it in the oven, but I added some chopped dates along with the apple.. and I don't like clove so I put in a bit of nutmeg instead.. I'll see how it looks when it comes out! I put it in muffin tray instead of a cake tin.
I thought this looked familiar - this was my dads favorite cake and I still make it often - usually make the whole cake in an 8 inch square pan and I always grate the apple. My recipe has an optional sugar and brown sugar topping but never use that - just a bit too much. Another oddity about my old recipe is that it is supposed to be a steamed pudding. I always bake mine. Fabulous cake!

great idea for a series. too many times I've baked a cake with the intent of freezing half of it, only to end up sharing the entire thing with my gf over the course of a week or so.
I’ve made a couple spiced apple cakes recently. I use bigger chunks of Apple, but I like the texture. It’s like an apple fritter. Also, I didn’t put any apples on top. And it had a nice crispy texture. “I made it my own “

It's the end of autumn here, perfect weather for a slightly warm apple cake. Was going to make the chocolate one at the weekend but might do this instead.
I couldn't click on this one fast enough when it showed up. liked the chocolate cake for two when you added in Coke. I'm not a big chocolate cake fan, but in that small quantity I figured that'd be just enough. But I love apples. I liked baked treats that involve apples. This looks really, really good, and I will definitely try this.
Also, the light through the window added a nice touch. Maybe my mind associated with warmth and paired it with the apple cake? For whatever reason, it seemed to fit nicely with this cake.
I love these small cake recipes. I downsize recipes to fit my two 6.5 inch springform pans all the time. I convert to grams, calculate the reduction by change in square inches of pan size, then use ratio and proportion calc to get new ingredient amounts.
This sounded so good I bought a 6" cake pan. It's in the oven now. Editorial notes: (1) the butter in the ingredients becomes canola oil in the method, and (2) the salt in the ingredients is never called for in the method. Can't wait to try it!
If you were to create and make available a pdf file of your two-person cake recipes I wouldn't complain. Not at all.

This is a gooder! Been craving a spice cake for awhile now and didn't happen to have apple or ground cloves but I had cardamon. Yum! Would cut the sugar back a bit next time.

Glen, can I use the base ingredients as a master recipe for two person cakes? Do you think it would reliably turn out well, with the flavorings and spices altered to suit the cake we want?
I think if I did this I'd do an upside down cake. Put the slices on the bottom with a brown sugar sauce.

Hi Glen! Do you have a source for a cake recipe from maybe the 30’s or ‘40’s in Vermont and parts of Canada made of Graham crackers with a maple syrup icing? My grandmother and mom from Vermont made it usually as a layer cake for birthdays but sometimes as a sheet cake.
Any chance of getting the recipe for a full size cake? Maybe a bundt pan cake?

I was surprised that you didn't do it "tarte satin" style where you put the nicely arranged apples on the bottom. If you had, you would have been able to just flip it out of the cake pan.

That's good to hear. I had my physical yesterday and my family doctor was still without power. Our home was without power after the 2018 tornado, but we escaped without harm this time after being trapped in a Dollarama for a while. On our way home we were on a train that lost power, but we were at a station with the doors open and quickly caught a bus.
