Beautiful boat and nice work I am just binging in all your videos. If I can make one comment, try to follow at least ABYC and NEC standards. These are the two big ones and to get insured these are the ones the surveyor will look for.
Wire sized for voltage drop. Marine wires with proper heat and chemical protection going through the engine room.
Chaffing protection going through bulkheads, head and holding tank. etc.
That will save you headaches down the line.
They have the boat in a marina so obviously they got insurance

Absolutely! Stay tuned.
Although it looks like you added more that typical wraps to your prusik, those knots are known to fail on a loaded line. So on your halyard line with tension, it typically will not catch a falling live load. Be very careful if you rely on that for life safety. Prusiks work well when used correctly. On a loaded line is not an appropriate use of a prusik.
It also attached to the carabinier with a VERY subpar knot for the use case.
Any updates on the IP?
Now it's been over a year how is the wind sensor working? I'm thinking of switching over to wireless but need dependability my mast is 65 feet so I'm wondering and what about the battery. Have you had to change it and how often?
Is this the Island Packet?
I would have covered those old instrument holes inside and out with fibreglas, letting it cure, sanding it flat, before moving forward with the starboard etc. just my humble opinion.
So you would have created 5X the work for no reason?
The wind sensor appears to be blocking a large sector of the nav light.
That's not a navigation light, its a anchor light. Its fine.
