I love the strong “old dad” vibes from James. I am in my 30s and a dad, and this man’s vibes is what I aspire to.
I think many of us here aspire to be just like James. I know I do. In every way. He’s a very class act, that’s for sure.

It's great to see James and Jeremy team up, again. I've followed the 'School of Wok' for a long time, and Jeremy knows what he's talking about. His teaching is excellent and it's great to see him getting the recognition he deserves.

This is MUCH BETTER than watching a normal cooking show where they just do everything. Getting an "everyman" like James and then quickly showing the expert at the end and comparing the result is very, very effective. Well done !
only james may would go do a video for a promotion of his own cookbook, and then just be like "yeah, you know what... whatever i put in the book is wrong."

I never thought I’d learn anything from May cooking-wise. But this is one of the best informational videos I’ve ever seen. It’s also great seeing an old dog learn new tricks :)

Best of all, the first trick Jeremy taught him was how to use his cleaver as a hammer...

As a Taiwanese, I have seen lots of chef doing that wok cooking skills. But it all feels so complicated and hard almost like an arts work to master lol. Everything comes out of the wok just tasted delicious.
My wife is Thai, she cooks everything without fuss or problems, she just cooks. She was amused when I suggested buying a "wok", she asked me what it was, here's it's got a special name, it's a pan. 😀
@@jaidee9570 YEP. My mom is brilliant at every dishes, but she never uses a wok. It is too heavy. The pan is her "wok" officially. ^ ^

Amazing how much fine point technique there is to stir fry. To the casual observer it looks "easy" but, like most things that take knowledge, practice, and sills it is most certainly not. Great video!

If you follow this recipe in the book it makes a HUGE amount.
What you need to do with veg with wok is that you need to first do something called 走油 which literally means run it thru the oil so you get the moisture out, take them out before you put them back to wok with things like meat.

Encyclopedia’s used to publish a year book and a bunch of stickers you would paste onto encyclopedia articles referencing the year book page with updated info, he could do that.

I think it's amazing how they all know how to use chopsticks, I spent the first 30 years of my life growing up in England and the past 20 here in America and I don't have a clue how to use chopsticks, and of all the hundreds of Asian restaurants and takeaways I've been too I've never even once been offered or had a chance to even try to use chopsticks, I wonder how people who have never been to a country that uses chopsticks learns that skill

@@bigdaddigaming You can buy packs of them on ebay for a couple of dollars. Also, it's just practice... just like using a knife and fork is, although you were too young to remember.
@@StockportJambo I'm british and often eat with chopsticks out of preference,especially rice. I dont even notice I'm doing it,except when I try to pick up a whole cherry tomato! Rice definitely tastes better with chopsticks. Daddi,once you get the hang of it you will wonder what the trouble was,and chopsticks can last years. I keep a short pair in my handbag for emergencies.

Jeremy says veggies first, then meat. I'd think meat first so that the veggies would be less likely to become too soft or not hot enough at end. I'm trying to learn and this point would seem to be an important part of the process.

Y'all really should get Jeremy to do a couple more episodes, he's a great presenter.
I used a thin carbon steel wok for years, but then I got an induction hob 😮. High powered but couldn't use my round wok anymore. Got myself a Skottsberg carbon steel wadjan (fits my Indonesian/Scottish ancestry) but you cannot toss a wadjan 😢. Do you think it's possibly to use a flat bottom classic (thin and cheap) wok on an induction hob??
