Australian here. Thank you for the recipe, Amy. I’ve looked at a lot of Creole seasoning recipes today ( we can’t buy it here - Cajun only) and yours is the only one that uses smoked paprika exclusively. Very useful for Australians where smoked sausages are almost impossible to get and vital to authentic Creole and Cajun cooking as I understand it.

I've never used smoked paprika but will definitely try it. I can't use salt or pepper, so I add other herbs and spices to substitute the flavor of salt. What I have found works well are dried parsley, dill, basil, and/or celery seed. I keep empty seasoning bottles that have shaker tops to store my homemade seasonings.

Remember I told you I had covid back in April and im suffering from it still with lingering symptoms. They call it long covid. Well the fatigue is better, but im still having a racing heart at times and all my heart tests came back normal. Well I've been having some stomach issues and I'm going in for test next week on the 20th. Please pray for me at your church and you and John that they come back good. I know your a prayer warrior and appreciate you as a sister in the lord! I will let you know when its all done. God bless you and John. We all love you and John and enjoy every minute of your shows.
