The lag you mention is likely the clarity option in particular recipes. Turn that off and no lag. I've had the X100V for almost four and have zero lag in writing to the card or in the menus.
I said in the same sentence that it wasn't the clarity option, i have no options changed in the settings and everything is the same as it would be straight out the box. I'm baffled by the lag but it's happened in both this camera and my old X-Pro 3. As for the menus I mean that they navigate slowly, often the camera doesn't realise you're navigating through them and will stay in the same place, I've had this problem on every Fuji camera I've used including the x100v, X-Pro 3, xt4, xt5, GFX 50s, GFX 50s ii and GFX 100s
