Make sure you are getting that frozen puff pastry from a location that sells it and not just keeping it in the freezer. You will scream if when you open it and it is all freezer burnt. Has happened to me several times. And yes I keep purchasing it because it is puff pastry and that is in the top 2 soughs I dislike making. Can you think of the other? hint starts with FILO. I just made the cheese and onion pasties and they were fantastic.I live in Canada, i think that our store bought puff pastry sheets must be much smaller than what is available in the UK unless they are rolled out to double the size.I only made four decent size pasties but they were fantasric!Thank you for your wonderful videos

Nobody does pies like folks in the UK - God John this is a lovely riff on very fancy French potatoes cream and cheese with appropriate adjustments for the texture of a pie filling....Wonderful....this pie can change with not only the kind of cheese but one can go in the cream direction with less onion (some is always needed) I add whole cream and a bit of nutmeg...weird but I like it. What I have never done is make a hand held pie....love it! Thanks....

OMG I made the steak bakes last week and tonight 12/11/23 I made these cheese & onion pasties they were absolutely delicious even my son couldn’t get over how nice both were as he normally buys them from a well known shop of which I don’t because I don’t like the taste. I never thought I would be making my own as I’ve never been confident to do so but watching your videos John has really given me the confidence to give it a go and my next pie is the chicken and mushroom one because it’s my favourite so far I’ve used shop bought pastry but I’m gonna try make my own following your recipe. Love these John, I make something very similar but I fold them in a large wrap @ around 10p each. I sometimes add chopped sausage, bacon or cooked ham. Ive had them in around 1/3 of a tin of tomato soup with chilli. put the warm soup in bowl, drop the pasty on top and enjoy. Try it.

Very authentic, especially adding raw onion and white pepper. A heaped teaspoon of English mustard also adds a lovely flavour in the mixture before cooking. Thanks John, these were delicious! I made a batch of rough puff pastry last night (350g plain flour, 175g butter gave exactly the right amount of pasty fwiw) and microwaved a single potato up instead of making mash. Quick and easy, will definitely be making these again and again 👍

I just made these today and also used your puff pastry video to make it from scratch …and WOW as AMAZING as it turned out, it is the last time I will be making and rolling out that dough from scratch! In Michigan's Upper Peninsula we make pasties with ground beef, rutabaga, onion and carrots. Pasties came into being here with our iron ore miner's. We have several pasty shop's in the area. Miner's would take these easy to carry meals to work. Today, people from the south are surprised when they hear about a food they never tasted or heard of before. Actually, this is the first I've heard of them existing anywhere else on the planet, so I am pleasantly surprised. PS, I really love your French Baguette recipe, and will use it forever.

Made these today using sweet potato added some Parmeson cheese with the chedar and English mustard they tasted great if you want to re-heat these use the oven with silver foil over them not microwave as it flattens the puff pastry like i did haha Thank you John their great

One thing i've learned from you is to weight my rolls before making them, always eyeballed it before. Today i used scale and made them all to same weight plus minus 2 grams... they look marvelous thanks to that.

Hi John, Just thought about this! I wouldn't put salt AND pepper - just pepper because cheese does have salty taste to it. Maybe the potatoes are cooked with salt too?? Maybe the pastry has salt in it too??? Could be just me being me... I love your recipes, so down to earth, so English, so easy.

Trying to think of a change to Cornish pasties today, I came up with a filling of onion, garlic, salmon, peas, white wine, cheese and cream. Seasoned with a little salt, generous amount of black pepper, fresh tarragon and a few pinches of za'atar for its citrus zing from the sumac. I think we may have a winner!

Hi john this is my very first video I’ve watched of yours & I think you’ve explained everything so well in detail 👍🏻 it’s a wonderful recipe I love cheese & onion pasty I use different cheese but I think I’ll be using mature cheese next time 😉 and when I brush my pasty with egg at the end I just sprinkle a little mix herb on top I think it taste wonders ♥️
I like to add a bit of mustard powder to mine. Really amps up the cheesy taste. Since I make my.own Pain Au Chocolat and Croissants I have some homemade puff left in the fridge from Sunday's batch. I might have to make some of these for tea with some peas and gravy this afternoon!

What part of the south are you in? Nearly every bakers I know of does them and failing that there’s Greg’s or Percy Ingles. All chippies do mushy peas too! Perhaps not gravy in all of them, which is a shame, but curry sauce, etc. Can be found

Make sure you are getting that frozen puff pastry from a location that sells it and not just keeping it in the freezer. You will scream if when you open it and it is all freezer burnt. Has happened to me several times. And yes I keep purchasing it because it is puff pastry and that is in the top 2 soughs I dislike making. Can you think of the other? hint starts with FILO.

Nobody does pies like folks in the UK - God John this is a lovely riff on very fancy French potatoes cream and cheese with appropriate adjustments for the texture of a pie filling....Wonderful....this pie can change with not only the kind of cheese but one can go in the cream direction with less onion (some is always needed) I add whole cream and a bit of nutmeg...weird but I like it. What I have never done is make a hand held pie....love it! Thanks....

OMG I made the steak bakes last week and tonight 12/11/23 I made these cheese & onion pasties they were absolutely delicious even my son couldn’t get over how nice both were as he normally buys them from a well known shop of which I don’t because I don’t like the taste. I never thought I would be making my own as I’ve never been confident to do so but watching your videos John has really given me the confidence to give it a go and my next pie is the chicken and mushroom one because it’s my favourite so far I’ve used shop bought pastry but I’m gonna try make my own following your recipe. Love these John, I make something very similar but I fold them in a large wrap @ around 10p each. I sometimes add chopped sausage, bacon or cooked ham. Ive had them in around 1/3 of a tin of tomato soup with chilli. put the warm soup in bowl, drop the pasty on top and enjoy.

Very authentic, especially adding raw onion and white pepper. A heaped teaspoon of English mustard also adds a lovely flavour in the mixture before cooking.

Hello John. My second make from your recipes. 1st being Wholemeal sandwich rolls. These cheese bakes put Greggs to shame, they all looked great and my family loved them for their tea tonight. Served with baked beans and oven chips they cleared their plates. Your format and detail are great which makes me feel highly confident tackling any of your recipes. I just made these today and also used your puff pastry video to make it from scratch …and WOW as AMAZING as it turned out, it is the last time I will be making and rolling out that dough from scratch! In Michigan's Upper Peninsula we make pasties with ground beef, rutabaga, onion and carrots. Pasties came into being here with our iron ore miner's. We have several pasty shop's in the area. Miner's would take these easy to carry meals to work. Today, people from the south are surprised when they hear about a food they never tasted or heard of before. Actually, this is the first I've heard of them existing anywhere else on the planet, so I am pleasantly surprised. PS, I really love your French Baguette recipe, and will use it forever.

Made these today using sweet potato added some Parmeson cheese with the chedar and English mustard they tasted great if you want to re-heat these use the oven with silver foil over them not microwave as it flattens the puff pastry like i did haha Thank you John their great

I've made these before but without potato. It seems the addition of potato stops the cheese from leaking out so I'll give them another try with your recipe. Thanks again!

Loved the video John best entertainment on the box! I bought a pack of this pastry from Tesco earlier this week with the intention of making Cornish pasties, but your cheese and onion ones are a much better idea, so we'll be having these instead. Trying to think of a change to Cornish pasties today, I came up with a filling of onion, garlic, salmon, peas, white wine, cheese and cream. Seasoned with a little salt, generous amount of black pepper, fresh tarragon and a few pinches of za'atar for its citrus zing from the sumac. I think we may have a winner!

Hi john this is my very first video I’ve watched of yours & I think you’ve explained everything so well in detail 👍🏻 it’s a wonderful recipe I love cheese & onion pasty I use different cheese but I think I’ll be using mature cheese next time 😉 and when I brush my pasty with egg at the end I just sprinkle a little mix herb on top I think it taste wonders ♥️

I like to add a bit of mustard powder to mine. Really amps up the cheesy taste. Since I make my.own Pain Au Chocolat and Croissants I have some homemade puff left in the fridge from Sunday's batch. I might have to make some of these for tea with some peas and gravy this afternoon!

All chippies do mushy peas too! Perhaps not gravy in all of them, which is a shame, but curry sauce, etc. Can be found
