    You work so hard!!!! Invest in a Victorio Food Strainer for making your applesauce/pear sauce/tomato sauce. You will never regret it. I can over 100 quarts of sauce a year and will never be without my Victorio! A canning Mama needs all the help she can get:)

    It’s amazing how I pick berries, & the honey bees just flip from another berry. We seem to all get along, sharing the blessings…😊 First time here, first time seeing your videos. I hope you and the children are on the mend. You should see my kitchen! I’ve been living with pots and pans, pressure canners on stoves or hot plates. Jars, lids, rings, Ball preserving books all over dining room table…ya…I flowed right out to dining room table! Lol…I got so tired of putting things away, only to take it back out. So, it stays out. I’m busy too!! Vegetables all over dining room table waiting for me to preserve. I actually love it! It’s a busy, messy FUN time for me. And even though your tired, I bet you still enjoy the process…great video. I’m happy I found you. 😄Connie from Michigan

    You can use a Pyrex measuring cup to dip into the pan/roaster then pour into the jars - easier than a ladle ! 😉

    A couple of things that I remember about processing corn. It has to be processed quickly. We always shuck immediately, and put directly in an ice chest full of iced water. The sugars in corn do not hold up for long, not even on the stalk.

      I learned that this year. I decided to can corn for the first time this year after watching a YT video showing that it could be raw-packed. Plus finding it on sale for $.12/ear, I knew I had to try . Good thing there weren't very many decent-looking ears left. Anyway, I got 12 ears ( on Thursday) and tossed them in the kitchen since I planned on canning them on Saturday. LATE Saturday night (I'm a night owl)) I shucked, washed and cut the kernels off. Fortunately, I decided to taste it. OMG! It was sour! . Another store had it on sale for $.20/ear the other day and I prepped (and tasted)) and processed it that day. Delicious! Thanks for explaining what happened the first time.

    You have no idea how happy I was to hear you mention how tired you are of FRUIT FLIES!!! I just found you and was watching several videos the other day and I can’t remember which video (maybe this one?) you mentioned you are sooo so tired of fruit flies. Let me tell you!! I am brand new on the scene here- my 2nd garden ever. And I was feeling like I was failing because I’m struggling to keep up before the darn fruit flies take over!! Ugh! Melons, tomatoes, squash, all the good sweet smells and they are crazy!! I think I got a handle on things this morning, in time to go back out for a huge harvest! 😂 Just wanted to express my gratitude in knowing you are honest enough with us to say you had them also. Thank you!!

    I agree with other's comments. Harvest your corn on a day you know you can immediately process. Havest, husk, freeze in one day. We love Gotta Have It.

    Wow, you really out did yourself. Wow I know you’re gonna be tired. I was tired when I did 180 pounds of pears, pear butter, and saved all the scraps for pear jelly so I suggest save all your apple scraps all the scraps to make some jelly out of apple 🍎

    Kelsey I put a couple of drops of dish soap in old Mayo lids then add apple cider vinegar. I place them near the fruit/tomatoes on my counters…..takes care of the fruit flies.

    Wow. You get the gold star for today. Doing all thar you did while sleep deprived and kiddos that don't feel well. I have the same chopper and love it. Ohio has been getting slammed with the storms too. Crazy year. Keep going mama.

    I bless you for peeling all those apples. I wash mine and remove the stem. Cut them in half and cook in my 22 qt roaster.I put them through my food mill. Will never peel them for sauce again. It saves so much time and energy.

    We prepare our corn using a bunt pan to cut it and electric knife, and never had much luck canning it always freeze it raw and butter and season when using it

    What a garden haul! You definitely have all hands full w/sick kids, too. I grew some banana peppers. I plan to slice in rings and pickle them. It's good on pizza! My cousin got me hooked on that. I didn't want to go buy a jar at the Kroger. My peppers are ripe, and should be good for 12 pint jars in all - maybe.
    I know you are feeling overwhelmed! Tis the season! Keep showing what you do. Many don't know what it takes to buy a bag of apples at the grocery store.. ❤

    Thanks for the share today! I saw that hummingbird at the start 😊The hummingbirds love the Zinnias. I have pictures of them standing on the flower leaves. I know you’re busy but you’d delight in a hummingbird feeder too! Fresh sugar water every 3 days or so (4 to 1 water to sugar) and you’ll be sooo excited. They also love my loofa flowers and sitting on my tomato cages. So much fun.

    Awesome job on all the produce put away! I’m watching these in order to get ready for this year’s garden season, and harvest, and you’re inspirational!
    As to what happened to your sweet corn - I suspect I know. You said earlier in the video that the corn had been harvested a couple days before and sat in a bucket in the house. Sweet corn needs to be processed as soon as possible after harvest - the sugars in the corn begin to turn to starches immediately upon being picked. The quicker you get it processed, the sweeter it will be - if you wait too long, all the sugar will have turned to starch, and it will be bland and tasteless. Hope this helps!

    We always added sugar, salt, pepper and butter to corn when fresh or opened from home canned. I prefer freezing corn vs. pressure canning btw. I also prefer freezing peas over canning them. Montage is good sweet corn seed also.

    What a day, or two, you have had! It has been a busy month of preserving. So grateful. I am intriqued with the pepper salt idea. We have no freeze dryer, but maybe dehydrating would work? The book is fabulous! I have really enjoyed reading it and using it. Great recommendation. Thanks...hope you are rested now.

    Hope the kiddos feel better soon, and that the adults don’t get it next.
    6:32 I’ve been thinking it would be nice to pickle some jars of peppers (I’ll add onions to mine) to use for Mississippi pot roast instead of pepperoncini.
    Regarding the corn, I am not an expert by any means, but I believe corn likes consistent watering, and is also a heavy feeder.
    As you were talking about what to do with the pear butter I started thinking about a crisp of some sort which led me to the idea of pear butter, yogurt & granola parfaits. Sounds so good. =)

    Sweet corn needs to be dealt with quickly after harvest…same day. Also a suggestion as an alternative to you corn cutting set up….very similar. Use a Bundt pan…..that way your riser is fixed. God bless you as you diligently work to feed your family delicious, nutritious food from your garden.
    I was also going to tell you corn is a super heavy feeder. We put down about an inch of chicken barn cleaning (we don’t compost it but try 2-3 weeks before planting. Then we add a couple of inches of our compost. But that long bed produces wonderful corn and now it has black beans and zipper peas that are ready to harvest. We have not fertilized in between crops. Also…corn you want to preserve is best planted as early as possible to avoid pest pressure. Just so you know….I am in central georgia…8a

    So we take our corn as soon as we get it home and throw it in garbage bags while its still in its husks and throw it in thw freezer. It lasts all winter long and it tastes just as fresh on the last day as it does on the first day. Like we just picked it. Of course close the bag up. Thats how we do it. We dont shuck it ot blanch it or anything.

    I made that salted caramel pear butter with pears we picked from my in laws. We got almost 4 bushels and we have to go back this weekend to pick the rest. They are from one giant tree!

      I ended up throwing the pears in the food processor and then cooking them. It was a lot faster that way.

    My local seed company says "This old-fashioned HEIRLOOM variety produces 8 rows of large, yellow kernels on 12-18cm (5-7") cobs. Plants grow 1.5-2m (5') tall. Golden Bantam's sweet flavour is fantastic for fresh eating or freezing on the day it is picked"
    I tried growing it before too with no success- and i seem to remember the "old fashioned sweetcorn" really isn't like the hybrids varieties we're used to from the store. And the pick and process same day element will be a hugefactor i think too.

As for the corn, if you harvest too late, the sugars begin to convert to starch. Also once harvested this process continues.

    Pick corn and process right away. The corn needs to be labeled sweet. The sweetness comes from the variety. Love your videos, thanks for sharing.

    Oh i feel it ! 2 of my children were very sick and for 1 week straight i got little to no sleep as i was constantly checking their temperature through the night! Mind you my husband got plenty😅 well he was working so he had to get his sleep 😊

    When I start to notice fruit flies around bananas especially, I take a mason jar, squirt a couple drops of dish soap, about 1 tablespoon of apple cider vinegar, and 1/2 cup of water. mix it together. Take a paper towel or any paper, create a cone with a small opening, and place the opening part of the cone in the jar, making sure it doesn't touch the liquid mixture. Place it near the fruit or veggies. It takes a bit, but eventually, you'll see them get trapped.

    East Tennessee here and our rain and temps have been nuts too. I have tomatoes with cracks and they are taking forever to ripen where it was cooler than normal, then it gets hot and cools off again. It's made growing things odd for sure.

    If you like super sweet corn try peaches and cream corn seeds. The corn is white and yellow cobs. But so sweet.

    You have done so much. Well done you. I place my apples skins cores and all in my roaster. When soft, I put them through my mill which removes skins and cores. Lovely apple sauce is the result. I was tired too watching you prep your apples. Hope you get some well deserved sleep!

    My mom made red hot apple sauce. Just add a box of red hot candy or some red hot jolly rancher candy that was crushed up….turns a pretty pink color 😍

    I’ve only grown Kandy Korn here in Northern Michigan. It’s always sweet. We freeze it, we don’t can it.

    I can't believe how much you get done in a day with 2 children. Great job! I found that freezing corn is better. The long pressure cooking is too long for it's size. I planted corn too bad year, small as well. We've had lots of rain as well. Nancy from nebraska

    If you wash your apples first save the peelings. I put them in the instant Pot and make apple juice from them. You can also make your own pectin from them.

    You can add pear sauce to apple sauce as a sweetener. Pear sauce needs no sugar to prepare.

    When you don't have large fields of corn to ensure pollination, you can pollinate them yourself. It doesn't take a lot of time to do, just walk your rows when silk appears and you'll be so happy that you took those extra 5 minutes when they are done growing. I've seen people with only a dozen stalks in raised beds get full ears from every stalks. Give it a try next year.
    You can use a bunt pan to hold the ear of corn and catch the kernels that get cut off.

    Oh, my, girl! Give away some produce, and don't make yourself sick! FYI~Corn needs more than a small patch to "make" according to my farmer father. It doesn't pollenate well if there's only a few rows. It's also better if harvested very young.

      LOL! If there is anything I really can’t get to, it does get gifted. I have heard that before but also heard as long as it’s in a good size block and you hand pollinate you should be ok. 🤷‍♀️ I’m not sure if I’ll use the space up for corn again, I just can’t source organic corn around here!

      I am sure she gifts produce as well to friends and family. But you have to remember that they eat all year from their garden. And she needs to process a lot of things.

      @@seedandsparrowhomestead It's my favorite, but it just takes up SO much space. I've put up many ears of creamed corn in my lifetime! My daddy LOVED gardening and would grow at least an acre of it. Just take care of yourself first!

    Oh I cannot wait until I get to that level of preserving. I’m just staring out waterbath canning. As for the corn, it’s not the variety. I grow golden bantam and it is by far my favorite and super sweet. Maybe you got miss labeled seeds? I have heard of people planting sweet corn and a neighbor planted field corn that cross pollinated the sweet corn resulting in starchier less sweet corn. Anyone growing corn by you? The sugars in sweet corn turn to starch very fast once harvested, something like 60% of the sugars are converted in the first 24 hours at room temps. This is slower if refrigerated.

    The sugars I'm corn begin to turn to starch as soon as you pick it. Process immediately for best results.

    Just got my new pressure canner from tFal. Double stacker. But have to learn how to use it. Lol. Way different than my older one. Did. Mixed broth. Chicken. And beans. Yesterday. Want to do red sauce today. We will see

    I always planted Illini extra sweet corn, very good. Corn should be processed the day it is picked for best results

    Preserve it as soon as you pick it to get sweeter corn and don’t let them sit on the stalk too long.

    You have done an awesome job. It would be nice when you are knee-deep in processing all the fruit &vegetables if you could get a family member, friend, or sitter to come and take the children or even stay and just entertain for a couple of hours. It would be a great mental break.

      Oh if only! Mental break is a good way to put it, I love working with my babies and involving them but sometimes my brain could use some quiet to focus on just one thing. I've gotten pretty good at keeping open and using approximately 32 "tabs" in my brain at once lol. Very seldom are my kids not with me. My husband does try to either take the kids when he is able and I'm still working or help me get the job done quicker :)

    As for your corn, I thought it sounded dry when you were cutting it off the cob so maybe you harvested a bit late? Looked good after you fixed it up tho! This is such a busy time of year, seems everytime we turn our back for a second there is another box or so of produce sitting staring at us! I cut way back this year and I am so glad I did. Here in MN we dont get pears till mid sept so I have to buy them from outside our state but I am going to try that caramel pear butter! Thanks for sharing your life with us. Blessings
