    OMG I made this soup. It is absolutely fantastic. You really nailed it. The only thing is that I didn't have apple juice or apple cider so I peeled and chopped 3 apples. This soup is truly amazing and it will be a staple.

      So glad you commented. I didn't have apple cider either but had some peeled and diced ones in my freezer. I added them instead and the soup came out so good! Probably wouldn't have thought of it if I didn't read your comment!

    Yup. This is it. This is the one. The video that gave me year-round access to my favourite Panera soup!
    My husband and I legit cannot thank you enough!
    I'm making it for the second time tonight.
    Definitely looking forward to this soup again, on this cold November Ohio night!

    I just made this to have with our Thanksgiving family dinner tomorrow. It was super easy to make and it's absolutely delicious! I has just the right balance of sweetness and spice. I can't wait for our guests to try it.

    This recipe was easy and delicious!!! Thank you for sharing! I used apple cider, splenda brown sugar, fat free cream cheese, and sodium fat free chicken based broth, to cut down the calories.

    OK, I've never cooked with a butternt squash but you've inspired me to do it. I actually love the panera squash soup so i'm excited to give this a try. Thank you!

      Hi, probably too late, but I would go for 6 or 8 quart. Leftovers, also most recipes are for 8 quart. Yes, I know you can half/quarter the recipe. Love my IP.

    2 cups of apple cider = 54 grams of sugar. I'll definitely give this recipe a try lol.

    I just watched another toober show and she just threw her whole 2-3 # squash into the IP with 1c water on the trivet (or basket) and cooked it for 20min, took it out and cut it, and scooped the squash out of the shell. Easy- peasy. Same with spaghetti squash. No cutting hard squash ever again.

      Great tip! Although with this soup, I'd like to cook up the squash with all the seasonings in the IP.

      I baked butter nut squash and left it to cool down . So easy no need to peel and cut 😊

      My only main objection to cooking a whole butternut squash like that is that I like roasting the seeds for a healthy snack, and I would think that the seeds wouldn't be all that roastable once cooked within the squash. 🤔

    How does one know when the butternut squash is ripe enough to use? I've never had one before but would like to try this recipe. I just got my 3-lb squash today at the grocery store and I'm leaving it out on the counter until I make the soup. I just want to be sure it is not under-ripe because it is so hard to cut it up?

    My copycat version of Panera’s Autumn Butternut Squash Soup. The ingredients
    Unsweetened or sweetened apple juice, Sweet cream a substitute will be heavy cream with brown sugar, maple syrup, butternut squash, vegetable broth and pumpkin purée. The seasonings use cinnamon and nutmeg.

    Looks delicious but I have a 3 QT mini instant pot and its just me so I always have to cut down recipes to make them fit in the mini pot. It’s a real challenge to try to figure out how to do that!

    Why would you peel it. The peel is the only pure fiber which limits considerably the extrema glucose spike experienced from the soup. That's why the peel in on the squash.

      The texture of the soup wouldn't be good if you left the skins on. Don't worry, there is still fiber in the flesh of the squash :)
