    I made this today, changing up the dressing as I don’t do dairy so the mayo and sour cream needed replacing. It was lovely. The pickled shallots are great, the different kicks of sour, salty, sweet, hot and crunchy are really excellent. My potatoes didn’t crush very well, but it didn’t really matter. I’ll be doing this again. Thanks Poppy for a very tasty lunch!

    My Oma use to make potatosalad with bratkratoffien, German fried potatoes fried in lard and sunflower oil. Try soaking the onion in cold water, removes the harsher flavour and makes the onion slices crisper, great for burger topping.

    Poppy, they looked delicious! Just love your channel, great recipes, entertaining, funny and with plenty of innuendo. Tried your roast potato method the other weekend, cooked in beef dripping and they were the best roasties I have ever made, and probably the best I've ever had! Super crispy and kinda shattered when I cut into them. Yum! Thanks for sharing! 🙂😋❤

    I usually make mayo from scratch. (Tonight it will be a Kewpie copycat.) But I lately used peanut oil to make it a standard mayo. 100% or just about 30% of the oil: a completely different, but amazing product!

    Speaking of your "amber jus", these would be great with Amba sauce, a tangy condiment originally from India/Iraq. Made from green mango, vinegar, salt, turmeric, chillies, and fenugreek. I can't get enough of the stuff.

    They say you 'eat first with your eyes', and seeing them being scraped off the baking tray made me lose my appetite. They just look horrifically over-cooked.
    As an alternative, cook some waxy potatoes, cool and fridge overnight. Cut into 1/4in discs (don't wash the starch off) and pan fry in seasoned oil (keep oil that has been used for frying onions or mushrooms, bacon or chorizo etc, to use as a base flavour). Look for a deep reddish brown as you turn them and it will give you a bite with a crispy outside and a soft, moist inside. Pat off excess oil. Serve hot or chilled.
