I love sourdough bread i think i will just keep buying it, for now still can't stand twist or bend for another six weeks still healing from Herniated back surgery,hope your all doing very well beautiful lady,❤

I followed your last sourdough series and had great results, however I lost it due to my health issues. This looks like an interesting way to go so I think next week I plan to order it and give it a go.
So great seeing the process of getting this starter active and happy. This time around my starter (Hepzebah 2.0) is a much lower volume and I'm not actually discarding...just feeding it then using it then refrigerating and doing it all again in a week. Crossing fingers she stays happy for me!
My sister said it has a lot to do with Atmospheric pressure and Elevation. San Francisco is only around 52 feet above sea level where Detroit is 623 feet above sea level.
My sister forgot our starter was in the oven and preheated it to make cookies😂bye bye sourdough life, we never tried again after that. 😢we should tho, homemade chili bread bowls were my favorite

If you could it would be interesting to run a DNA test on it to see what exactly is still in it from its original form. That seems like it really worked well. I can’t to vinegar either the apple cider one I tried looked pretty sad. I bet you can’t wait to bake with it, curious to see if you taste a difference. Excellent series and videos.
Ok, I'm not sure if I just goofed on my starter or not. I had been following your instructions using the 1916 starter. i was barely getting a doubling of growth. I kept it in the oven with the light on. Earlier this afternoon I feed "Lucy" 100g of luke warm spring water and 100g of the King Arthur Organic flour. I placed her in a dark cabinet going off a suggestion from one of your videos from 2-3 yrs ago. I just opened the cabinet after several hours and the starter had grown to just below an inch from the top of my Wick jar. Is this still good or do I need to discard all but 40g and then do 100 and 100? I realized I had not done the 40g of discard before feeding her the 100 100. HELP! 🙂

Depending on how your starter rises. I keep mine in a starter house so i know if I feed around midnight then in the morning its ready to go in bread. So watch how many hours it takes to double/triple or more in size. When it tops out. Then feed according to that. Everyones starter is different. Usually 12 hours give or take.
I can get a great starter going but I just can’t get the bread thing figured out with the the starter. I can do bread with yeast (instant)- just for the life of me not with a starter- but boy howdy can I make a great waffle-lol. I have watched and watched and done- but I’m doing something wrong.

Do you let it come to room temp? Do you feed it when you pull it out of the fridge? ❤️
I let it sit out on the counter for an hour or so and then feed it.

it's ok if it doesnt double....give it a little more time.....then go ahead and feed it!

yeah, they sell wooden and silicone sourdough stirrers on Amazon! Makes it easy to stir inside of a jar too.
