Garage for me and my bikes, my mate bubbled his last year but was a faff to get in and out so he didn't ride for about 6 or 7 months and had serious skills fade . Now he has a diesel heater ( Chinese) and the roof insulated so he is hoping to be able to use it more this winter as hopefully there will be no moisture on it as his garage is cold and damp , good luck with the move my mate lives in blaye (probably spelt wrong) in or near the Gironde.
Jammy git, south of France eh 🤣🤣🤣 Wonderful riding weather for sure. My bikes are in a secure covered area with cotton sheets under Oxford bike covers. Works well for me and no chance of scratching from the Oxford cover.
Mine are kept in an unheated garage all year round under fitted 'dust' covers. In the country during autumn and winter, of course, you have to take precautions against the potential predations of mice, which manage to squeeze in through any small gap and can cause costly havoc if allowed to go unchecked.
Ah yes, les rongeus (rodents). Rodents are seen in our underground garage area fairly regularly. I use both strategically placed rat poison and _Dryer sheets._ I also place Dryer sheets under the seat of the bike and in the fairing pocket and change them every autumn. Seems to have worked so far... Not too keen on the niff though!

Get a small electric fan and set it on low speed. It stops the condensation (well it does in my garage) and is cheaper to run than a heater.

I prefer "Little Nipper" mouse traps primed with offcuts of Snicker bars. Irresistible and instantly lethal.
