Absolutely delicious as promised. I reduced the brown sugar to 1/2 cup and added raisins. I love chocolate covered raisins. My husband strives for no added sugar but even he could not resist this.
I dont use eggs or butter but i absolutely love watching you bake. If you ever feel like experimenting with a replacement egg, etc you'd be extra extra awesome ❤

Just pulled a zucchini from the garden. I am going to try your recipe. I have a question- once the extra zucchini is frozen how would you use it for bread? Do you need to thaw and drain it first? Also thank you so much for not having a “loud” website. My brain feels like exploding when I need to scroll and there are videos and ads everywhere.
Hi Kelley! Thanks for watching ❤️ Can’t wait for you to try the bread! For the bread, you do need to thaw the zucchini and but you don’t need to drain it. The extra moisture is actually good for this bread. If for some reason there is a lot of water in the bowl after thawing, you could drain the visible liquid but you definitely don’t need to squeeze it out as some recipes require. I use coconut oil in this recipe (which is solid at room temp like Crisco) and I always melt it before adding. Mixes in more easily 👍🏻 Not sure you’ll need the sour cream, as this bread is already very moist, so maybe start with 1/4 cup? Hope that helps, Marie

Can I use 1/2 unsweetened applesauce instead of the oil? I often substitute it for the fat when baking.
